Amazing Pork Tenderloin in the Slow Cooker

Excellent. I used the two pork tenderloins from Costco. I used 1/2 an envelope of the onion soup mix and did not add any other salt. I cooked for one hour on high then 3 on low. Next time I will just cook on low for 4 hours. I served with mashed potatoes and peas. This was really good and will definitely be used often. Thanks.

Homestyle Turkey, the Michigander Way

Oh my. I'm now a big fan of Michigan. This was incredible. I had a 10lb Turkey Breast, and used butter and salt w/the warm water and bouillon. 4 cups of stock would be good as well. That was it. Reduced the cooking time a little. I cannot believe how moist this was. Usually turkey, especially just breasts, are dry. No more brining for me. I will use this recipe for Thanksgiving as well. Thanks.

Spinach Chicken Parmesan

This was very good. I needed more than 1/3 cup parmesan cheese. I also used 1 ten ounce of box of spinach and added about 3/4 cup milk. I also added a little bit of nutmeg with the spinach a la Rachael Ray. You also definitely need a bigger pan about 9x13.

Lemon Chicken Piccata

Fantastic. I used 4 breasts ( for leftovers) and pounded them pretty thin. I also used 1.5 cups chicken broth for the extra chicken and 2 cloves of garlic. I cut the chicken into around 1 inch pieces. I cooked them in 2 batches. I sliced the half lemon very thin. After the butter was mixed in I added the chicken back to the pan to reheat as I didn't use the oven to keep warm. I served this with Vermicelli. I will definitely make again. Thanks!

Southern Candied Sweet Potatoes

My family has been making sweet potatoes this way for years. We use brown sugar and omit the spices. I pre-cook them in microwave for a few minutes then slice and simmer them for a few hours in a pressure cooker. Fabulous. Absolutely no spices or marshmallows.

Downeast Maine Pumpkin Bread

Excellent. Two minor changes: I used 2.5 cups sugar ( 1.5 white and 1 cup light brown. I cooked in two large loaf pans instead of 3 smaller. Add an extra 10-15 minutes if doing two pans. Made 4 loaves the past two days.

To Die For Blueberry Muffins

Excellent. Just took them out of the oven. The only change I made were to make 12 regular muffins and therefore, reduced the temp to 350. When using fruit like blueberries, mix them with a little flour before adding to your mix to keep them from sinking. I used 1/2 tlb topping for each and will freeze the leftovers.

Slow Cooker Chicken and Dumplings

This was very good. The only changes I made was to add more chicken, I figure 1 breast per person, added some frozen peas towards the end and like another reviewer said I added 2 small cans of biscuits 2 hours before meal was done.

Corned Beef and Cabbage I

Second time I'm making this recipe. It's excellent. I always double the recipe and use Jamie Oliver's Bubble & Squeak for leftovers. Corned Beef is eaten by Irish Americans so shame on those who left 1 star. FYI: According to the History Channel, Irish immigrants who came to the United States in the “mid-to-late 19th century” started using brisket instead of bacon when making the dish. “Irish immigrants living on New York City’s Lower East Side substituted corned beef for their traditional dish of Irish bacon to save money. They learned about the cheaper alternative from their Jewish neighbors.”

Peanut Butter Cup Cookies

Awesome. I got 48 after using a small ice cream scoop. I didn't have enough PB Cups so I used M&M's and small chunks of Snickers Bars. You could add almost any candy. Great tip about freezing the PB Cups. Worked perfectly.

Pasta with Peas and Sausage

This was very good. To cut back on fat, I used 1 cup of 1% milk and 1/2 cup of half n half thickened with 2tlb flour. I only used 2 tlb butter. I used 1/4 cup of Parmesan Cheese. I also added a Pint of Grape Tomatoes sliced in half. Cooked till tomatoes softened. Quick weeknight meal. I will make this again.

Penne with Spicy Chicken Sausage, Beans, and Greens

This was fantastic. I left out the pasta since we're on pasta overload this week. I added 3 extra sausages. I used the cooked chicken tomato, basil & mozzarella ones from Costco. I added a tsp of red pepper flakes for spice. I served w/a salad. Bread would be nice too to mop up the sauce. Thanks!

Creamy Slow Cooker Potato Soup

This was excellent. I tripled the potatoes to 9 cups, ( love leftovers) diced small, one cup celery and onion, 3 cups stock, 4 tsp flour.. after 2 hours I added 2.5 cups milk. After another 2 hours I blended half the soup because I like some chunks. I then added 3/4 package of cream cheese. After putting soup in bowls I added a little more milk to each so as not too thick.
