Chili I

Made this for the second time tonight. For the most part I really stuck to the recipe and and have to say this is just wonderful recipe. Thank you ROBTX99! I am so happy w/ the flavor, very intense and sophisticated. Hot, and sweet... worthy of a chili contest for sure! Here are my notes with just a few changes from the original ...1.5 Tbsp Williams Chili Seasoning, 1.5 Tbsp McCormick Chili Powder, 2 tsp. Chipotle Chili Powder, 1 tsp. African Bird Pepper. Steven's Point Belgian White Ale, no Cayenne, 1 lb. cubed sirloin, 1.5 lbs chili beef, 3/4 yellow onion, 2 Serranos, 1 Caribbean Red Habanero, 1 Anaheim Chile, Pintos instead of Kidney Beans

Lime Chicken Soft Tacos

This chicken was delicious! Although I didn't follow the recipe exactly, I did stick to ideas I found here in the review section for the most part. Super easy! I added all the ingredients to my slow cooker with only two changes; I subbed dried cilantro for the dried oregano, and added 1 Cup of veggie broth. I also added 3 green onions rather than two. Cooked on High for 2 hours, then low for 2 hours. Took the chicken breasts out and shredded them with two forks, then added back to the slow cooker on warm for about 30 minutes. Awesome! Only giving 4 stars because I think the recipe as is would be better in the slow cooker ;)

Vegetarian Black Bean Enchiladas

Made this tonight... Veganized it by using 'Follow Your Heart' Vegan cream cheese and 'Daiya' Monterrey Jack instead of cheddar. Also used corn tortillas instead of flour. Thus making this both vegan and gluten free. Left out the corn because my wife doesn't like it. Also used some roasted hatch green chile's I had in the freezer rather than canned green chiles. The enchiladas were great, but don't hold up very well. I think it might hold up better with flour tortillas. I'll continue to use corn though to keep it gluten free. Maybe next time I'll skip putting the enchilada sauce beneath the enchiladas.

Michele's Ground Beef Casserole

I didn't have the exact ingredients available; but this is a great base recipe. Here is what I did: Browned the following: 12oz. Hot Italian Sausage (bulk) 8oz. Ground Beef 1 Orange Bell Pepper - chopped 1/2 large onion diced 1 heaping tbsp minced garlic I didn't have any frozen mixed veggies so I added the following: 5oz fresh sliced carrot 5oz fresh chopped celery 6oz frozen corn (thawed) 1 Fresh Jalapeno (chopped) 4 Roma Tomatos (chopped) Increased Oregano to 1/2 tsp and Black Pepper to 1/2 tsp I also didn't have a full 16 ounces for Spaghetti sauce, So I added 13oz. Spaghetti sauce with about 3 ounces of water. I topped this with a can of Immaculate Baking crescent rolls; since these are dairy free (and wonderful!). This came out delicious! Thank you Michelle!

The chicken came out nice and tender, but the flavor was disappointing. I was hoping for more of a Tandoori Chicken flavor and this just didn't have much kick at all.

Slow Cooker Chicken Taco Soup

I love the simplicity of this recipe. It's rare that I can follow a recipe verbatim due to some dietary requirements in my household, and that was the case here. But I didn't have to change much. I made Bill Echols' taco seasoning as is recommended in the reviews. I used fresh roasted and diced Hatch green chiles and diced up 3 tomatoes (subbing this for the Rotel). Made my own black beans and used frozen corn. The beer I used was a Sam Adams Oktoberfest, and I only used 2 boneless skinless chicken breasts. The two breasts totaled 1.45 lbs. of chicken and that was plenty. It was really easy to make and came out quite good. If I make it again though I might skip the corn and add a blend of masa and chicken broth.

Garlic Pepper Seitan

The recipe was good. I used 1/2 Green Pepper and 1/2 Red Pepper, also substituted 1/4 Cup black pepper sauce for the pepper. The sauce consistency (I did add the broth from the seitan package) was perfect, but the flavor was just lacking. It needs more spice. I added Sriracha to my plate and that helped a lot; but the seitan came out kind of rubbery. This was the first time I've tried Seitan, so I'm not sure if it was the recipe, or the seitan. We used WestSoy brand Chicken Style Seitan; got it at Whole Foods.

Creamy Cheesy Grits

These were great! Served them with breakfast on Christmas morning and they were a big hit. They even re-heat well, which is a big plus for cheese grits! Next time I might try some sharper cheeses, but it's a great recipe.

Jamaican Burgers

These are great! We used Jalapeno instead of Habanero pepper (because that's what we had). Also subbed in brown rice. Had no trouble forming patties or with crumbling. I'm a stubborn omnivore with an aspiring herbivore for a wife. I think I liked these even more than she did! Top'em off with a slice of pepperjack, red onion, and some homemade guacamole! The only thing I will change is to cut the recipe in half. This made a ton of burgers.

Garlic-Tarragon Cream Sauce

I thought this came out perfect consistency wise. I did add 2 additional cloves of garlic (for a total of 6), but felt it could still use two more. Also, with the sweetness from the taragon, cream, and garlic all working together I felt like perhaps 1/2 tsp. of cayenne might be in order next time. All in all though ...it's a keeper. Ready to eat in 30 minutes tops - always need those recipes! Thanks Icy!

Zesty Slow Cooker Chicken Barbecue

This was Great!!! I used a whole cut-up chicken (removed the skins before putting in slow cooker) and Rendezvous Hot BBQ sauce (Memphis Style!). It cooked for 8 Hrs on low, then (since we weren't home yet) another 2 on warm. The chicken was slightly over done, but still wonderful! Shredded the chicken served it over Garlic Mashed Potatoes. Will definitely make this one again.

Made this in a big hurry one night. The wife and I were truly surprised at how good it was! We didn't use store bought pasta sauce though ...rather made our own batch using tomato sauce and spices. Will definitely make this again!

Ranch-Style Thighs

I used 4 thighs and 4 split breasts - all skinned. Doubled all ingredients and added a tsp of cayenne and another of Tony Chachere's Cajun Seasoning. I'm giving four stars because it was good, and VERY easy. The kids loved it!

Spicy Garlic Lime Chicken

Yumm! I love the flavor of this, I changed it a bit, using more lime than the recipe called for, and minced garlic instead of powder. I also cut the chicken into strips because we like it that way ...more flavor. I roasted the garlic in the butter/oil before adding the chicken. My wife loved it too... and she's SUPER picky!
