I really love to cook, and I love great food. I started cooking at an early age, and now as a husband and father I'm the primary cook in the house.
My favorite things to cook
I love cooking just about anything, but some of my favorites are Red Beans & Rice, Chili, Beef Stew, Chicken Tenders, Paninis, Tacos, and a whole lot more!
My favorite family cooking traditions
Sunday Family Dinner, Thanksgiving, Cinco De Mayo, Chinese New Year, and making enchiladas with my lovely wife!
My cooking triumphs
My chicken enchiladas are an all time favorite of just about everyone who has tried them. I think my greatest triumph though is seeing the smiles on my kids faces when I answer that daily question ..."What's for dinner tonight dad?"
My cooking tragedies
Been pretty lucky here, but I did make a make a slow cooked hot beef recipe once that has lived in infamy. It came out WAY too hot because I used Sriracha chile sauce instead of standard Heinz Chili sauce. It's lived forever because later that week my wife was on the phone with her mother and said "Hey, have I told you about Drew's hot meat!" Hahaha! Needless to say my Mother-in-Law didn't want to hear anything about it.

Chili I
Made this for the second time tonight. For the most part I really stuck to the recipe and and have to say this is just wonderful recipe. Thank you ROBTX99! I am so happy w/ the flavor, very intense and sophisticated. Hot, and sweet... worthy of a chili contest for sure! Here are my notes with just a few changes from the original ...1.5 Tbsp Williams Chili Seasoning, 1.5 Tbsp McCormick Chili Powder, 2 tsp. Chipotle Chili Powder, 1 tsp. African Bird Pepper. Steven's Point Belgian White Ale, no Cayenne, 1 lb. cubed sirloin, 1.5 lbs chili beef, 3/4 yellow onion, 2 Serranos, 1 Caribbean Red Habanero, 1 Anaheim Chile, Pintos instead of Kidney Beans

Lime Chicken Soft Tacos
This chicken was delicious! Although I didn't follow the recipe exactly, I did stick to ideas I found here in the review section for the most part. Super easy! I added all the ingredients to my slow cooker with only two changes; I subbed dried cilantro for the dried oregano, and added 1 Cup of veggie broth. I also added 3 green onions rather than two. Cooked on High for 2 hours, then low for 2 hours. Took the chicken breasts out and shredded them with two forks, then added back to the slow cooker on warm for about 30 minutes. Awesome! Only giving 4 stars because I think the recipe as is would be better in the slow cooker ;)
