Juicy Roasted Chicken

This chicken was the BEST I've ever made/eaten at home. The dark meat was awesome. My 2 & 4 yr old finished their portions and asked for seconds!! The white was a little over cooked at 1 hr 15 min, as the recipe said. But, I think our oven cooks a little hot. The only change I made was I only used 1 stick plus 3 T butter, instead of 1/2 cup margarine.

Janet's Rich Banana Bread

Fantastic!! Super moist. I LOVED the banana chunks. So glad I tried that instead of mashing like I normally would. I just thought there was a good reason the author of the recipe specified that detail. I even used whole wheat flour and my husband didn't know the difference.

Guacamole

This was really excellent. I took it to a women's party and got many rave reviews. My only complaint is that the recipe says it will serve 4 people, so I doubled it. However, I altered it a little bit as I saw fit: I only put 1.5 limes in, instead of 2; 3 romas instead of 4. I thought the lime flavor was far over powering (but I liked it for my taste). And it ended up serving about 15 people at the party, and I still had a full bowl (15ish servings) to take home! It did not brown at all for me the next day, which was a plus because I enjoyed it so much!

Chocolate Frosting II

SO good! Very similar to the kind in a can, but much better and far richer. I use Dutch cocoa powder and more like 2 1/4 c powdered sugar and I kept the butter soft instead of melted and just mashed everything with a fork. I used it to frost a Duff chocolate cake mix (also the best!), cooked in a 9 x 13 and it worked great! Rave reviews from our guests, too!

Perfect Pulled Pork

Wow- so juicy and tender! Everyone loved it. I cooked my 5+ pound roast frozen (mostly) on low for about 10 hours. I love this recipe because it is one of the few that doesn't contain soda pop!! It was slightly spicy alone, but when put with BBQ sauce, you couldn't tell. 7 kids ate it, including a one year old, with no complaints! Thanks for the great recipe! So simple and so good.

Mulligatawny Soup I

This was great! My two-year old gobbled it up. I skipped the cream and the apple, for sake of time. Homemade chicken broth really does the trick, too! It said 6 servings, but my 3 kids and I barely had enough. Next time I'll add more broth. Very delicious, though!

Baked Oatmeal II

Been making this for years! My kids and I love it! Serving with warm milk is a must! We like it with fresh cranberries or raisins as well, and use just 1/2 cup brown sugar. We also bake it for 25-30 min, or until edges are brown and top is golden. I would say this serves about 6.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This was great, just what I was looking for - a different way to make tuna salad. I only had 1/4 cup mayo on hand, so I substituted 1/4 cup plain yogurt. It was so good this way (and much healthier) I don't know that I'd ever want to try it with a 1/2 cup mayo!! I also used spicy brown mustard, I was out of dijon. I did add one hard boiled egg and used a little more pickle relish. I didn't have any croisssants, so I toasted my bread and added sliced tomato, too. SO YUMMY and satisfying!! Good on crackers, too!

Chunky Chicken Noodle Soup

This was SO good. I did make homemade broth with 5 chicken legs, 1 carrot, 2/3 onion, and 1 celery stalk chopped in large pieces for an hour (then discarding the veggies, saving the broth, using the chicken for the soup). The marjoram and thyme are so good and flavorful!!! I did double the recipe, too. But, I didn't measure anything except for the spices. Thank you, this recipe's a keeper!!

Oatmeal Raisin Cookies IV

These were amazing!! My secret ingredients were organic brown sugar and whole wheat flour. I used 2 cups whole wheat flour and 1/2 cup whole wheat pastry flour. Oh WOW they were soooo good. Everyone who ate them thought the same. They were super moist for every day they lasted in the kitchen (about 4).

I've been making these for a couple of years and am just getting around to doing a review! I make them all and wrap the leftover ones in foil and freeze them. When reheated alowly in the microwave they taste great - such a quick and easy meal or snack!! We always use american cheese instead of mozzarella. We love them!

These are crazy good! And easy! So much better than a box mix. Always a blessing to make stuff from scratch. Hard elbow grease burnin calories and more nutritious and far better taste is a win-win-win!

Oatmeal Waffles

These were awesome! My 5 yr old and 3 yr old gobbled them up with honey on top. I liked the flavor better than whole wheat waffles. The oatmeal adds a nice flavor and texture. I did use 1/2 molasses, 1/2 honey b/c molasses smells awful to me. And I used milk + vinegar to make buttermilk. YUM! And I love that they have 10 g protein!!!

Sweet Potato Potato Salad

I liked this a lot. I do think it's a bit too peppery. I reduced it to about a tsp. and think it'd be better with even less. It got rave reviews by our dinner guests as well! We did use 2 sweet potatoes and 1 red potato. I also used 1/3 T yellow mustard, 1/3 T coarse ground mustard and 1/3 T spicy brown mustard. Thanks for the recipe!

Sugar Coated Pecans

These were great!!! I only had 1/2 pound pecans (2 cups) and halved the recipe, but I left the egg white and water the same. So, with the egg white being doubled, I liked it, but I think I would like it without, just as written and using a whole pound per 1 egg white. It wasn't overly sweet or anything, but I think less sweetness and a little more salt would be just as good.
