Oatmeal Raisin Cookies IV

These were amazing!! My secret ingredients were organic brown sugar and whole wheat flour. I used 2 cups whole wheat flour and 1/2 cup whole wheat pastry flour. Oh WOW they were soooo good. Everyone who ate them thought the same. They were super moist for every day they lasted in the kitchen (about 4).

Whole Wheat, Oatmeal, and Banana Pancakes

If I could add more stars I would!!!!!!!! SO delicious. I omitted the milk powder and I threw some fresh blueberries on the pancakes once they were cooking before I flipped them. My 4 yr old and 2 yr old and I all ate them without syrup!!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

This was great, just what I was looking for - a different way to make tuna salad. I only had 1/4 cup mayo on hand, so I substituted 1/4 cup plain yogurt. It was so good this way (and much healthier) I don't know that I'd ever want to try it with a 1/2 cup mayo!! I also used spicy brown mustard, I was out of dijon. I did add one hard boiled egg and used a little more pickle relish. I didn't have any croisssants, so I toasted my bread and added sliced tomato, too. SO YUMMY and satisfying!! Good on crackers, too!

Juicy Roasted Chicken

This chicken was the BEST I've ever made/eaten at home. The dark meat was awesome. My 2 & 4 yr old finished their portions and asked for seconds!! The white was a little over cooked at 1 hr 15 min, as the recipe said. But, I think our oven cooks a little hot. The only change I made was I only used 1 stick plus 3 T butter, instead of 1/2 cup margarine.

Pie Crust IV

This crust was the best!!! I am so excited it turned out so well for my double crust potpie. I used a fork this time instead of a pastry blender and it worked a lot better for me. It was SO flaky and perfect - the best I've ever made! YUM! I used ice water and added in a few tablespoons at a time.

Chunky Chicken Noodle Soup

This was SO good. I did make homemade broth with 5 chicken legs, 1 carrot, 2/3 onion, and 1 celery stalk chopped in large pieces for an hour (then discarding the veggies, saving the broth, using the chicken for the soup). The marjoram and thyme are so good and flavorful!!! I did double the recipe, too. But, I didn't measure anything except for the spices. Thank you, this recipe's a keeper!!

Chicken Noodle Casserole

I thought this was really good! We used whole wheat noodles and cooked a whole chicken ahead of time to save time. This is how we cook most all our meals - this number of pans and such. I'm sad to see all the reviews that thought this was too much work. I think it's well worth it!

Sugar Coated Pecans

These were great!!! I only had 1/2 pound pecans (2 cups) and halved the recipe, but I left the egg white and water the same. So, with the egg white being doubled, I liked it, but I think I would like it without, just as written and using a whole pound per 1 egg white. It wasn't overly sweet or anything, but I think less sweetness and a little more salt would be just as good.

Chewy Granola Bars

These were great!! To prevent crumbling, I did as another reviewer said about mixing in the oats a little at a time, and it worked. I only used 4 cups oats. I also used 1/2 whole wheat flour, 1/2 white flour, only about a 1/2 cup mini chocolate chips and a little under 1/3 cup brown sugar because I didn't want them to be too sweet. I also used raw honey - and I highly recommend that for GREAT honey flavor! Oh, and I accidentally forgot the vanilla. I took a pan to work and they were gone in less than 2 hours. They were very good and not crumbly at all. Oh, and I mixed by hand, too, to prevent crumbling.

Marie's Easy Slow Cooker Pot Roast

This was the best roast I've ever made!! It was super moist and juicy. I used a mostly frozen chuck roast that'd been in the freezer for 1 year and 7 months (I'd even almost thrown it out because of the discoloration). I thawed it in the fridge over night, then put it in the slow cooker for about 5 hours on high, then low for an additional 3. It was succulent. Thank you for the delicious recipe!

Cream Cheese Penguins

People loved these! I think it took me well over an hour, though. It took at least an hour to put them together and about 5 min. prep time for the carrots. I found I had to cut down the 'noses', too, to get them to fit in easily and not smoosh in the faces. I thought they tasted just fine - no need to add any seasoning. I found it quite difficult to stuff the cheese into the olive as well, without getting it all over the olive. I then tried a piping bag (ziplock) and I liked it, but the cream cheese got warm and didn't look very nice so I had to chill the bag and try it again. It just took a while for me to get it figured out the best way to get the cheese in there - a small kids spoon did not work well.

Oatmeal Waffles

These were awesome! My 5 yr old and 3 yr old gobbled them up with honey on top. I liked the flavor better than whole wheat waffles. The oatmeal adds a nice flavor and texture. I did use 1/2 molasses, 1/2 honey b/c molasses smells awful to me. And I used milk + vinegar to make buttermilk. YUM! And I love that they have 10 g protein!!!

Award Winning Soft Chocolate Chip Cookies

These are pretty delicious! I had some butterscotch pudding and white chocolate chips on hand and thought they would go well together....and they did! I don't know if my oven is off, but I couldn't get a nice looking cookie very easily. They ended up pretty flat. They were starting to brown too much on the bottom, but were not done in the middle. Next time I will take down the oven temp some more and plan for a longer cooking time.

Apple Oatmeal Crisp

SO yummy! I've made other oatmeal apple crisps in the past, but this one was extraordinary! Love dirtying just one bowl, too! I barely used any white sugar, since I wanted the natural taste of the apples to come through. I also recommend Wholesome Sweeteners brand Organic brown sugar- a must have for baking!
