Home-Style Scalloped Potatoes

This was my first try at making homemade scalloped potatoes and they were better than the box, for sure, but I think more flavor could be added, like maybe adding cheese or thyme and maybe a little more salt. My potatoes were sliced nice and thin and were definitely done in an house.

Cream Cheese Penguins

People loved these! I think it took me well over an hour, though. It took at least an hour to put them together and about 5 min. prep time for the carrots. I found I had to cut down the 'noses', too, to get them to fit in easily and not smoosh in the faces. I thought they tasted just fine - no need to add any seasoning. I found it quite difficult to stuff the cheese into the olive as well, without getting it all over the olive. I then tried a piping bag (ziplock) and I liked it, but the cream cheese got warm and didn't look very nice so I had to chill the bag and try it again. It just took a while for me to get it figured out the best way to get the cheese in there - a small kids spoon did not work well.

Chewy Granola Bars

These were great!! To prevent crumbling, I did as another reviewer said about mixing in the oats a little at a time, and it worked. I only used 4 cups oats. I also used 1/2 whole wheat flour, 1/2 white flour, only about a 1/2 cup mini chocolate chips and a little under 1/3 cup brown sugar because I didn't want them to be too sweet. I also used raw honey - and I highly recommend that for GREAT honey flavor! Oh, and I accidentally forgot the vanilla. I took a pan to work and they were gone in less than 2 hours. They were very good and not crumbly at all. Oh, and I mixed by hand, too, to prevent crumbling.

Pumpkin Apple Streusel Muffins

These were AMAZING!!! I used 1/2 cup wheat flour, 2 c. white flour, and I added some whole oats on top. Everyone raved about them! I can not wait to make them again.

Spiced Pot Roast

This was awesome!!! Easily the best roast I've ever had. Even for leftovers, it was so moist I ate it plain on a hotdog bun and it tasted great - no sauce or anything! I used a bone-in roast and spiced mango chutney from Walmart.

Dump Cake I

This was incredible! I do the order a little differently. I pour the cake mix into a lightly buttered 13 x 9. Then I drain half of the liquid from a 20 oz can of crushed pineapple and pour the rest in over the cake mix. Then, I add the can of cherry pie filling. Lastly, the 1/2 stick of melted butter.

I've been making these for a couple of years and am just getting around to doing a review! I make them all and wrap the leftover ones in foil and freeze them. When reheated alowly in the microwave they taste great - such a quick and easy meal or snack!! We always use american cheese instead of mozzarella. We love them!

Louisiana Sweet Potato Pancakes

I thought these were pretty good. It wasn't a planned meal, we just had a random sweet potato on hand that I didn't have a use for. I loved adding in a vegetable to pancakes. I did add cinnamon & vanilla, and a little extra sugar.

Angela's Awesome Enchiladas

We LOVED these!!! Thank you so much for the recipe. I have tried 3-4 other enchilada recipes that I've never wanted to make again because they were just 'ok'. These were awesome, just as the name says!! I didn't even use the green onion or black olives, which we love, but just didn't have on hand. I also used 1/2 the cheese called for, because that's all we had. And they still tasted great. My husband even loved them, and he doesn't typically care for sour cream or chunky onions and green chilies...which says a lot. Again, I'm super excited to finally have found a recipe that tastes great, one that I can make for company, and one that we all love. Even my 15 month old was gobbling up the chicken! Thank you!

Valentino's Pizza Crust

This is a good crust, just not the best I've ever had. It was my first homemade crust. I typically double the batch of the Great Value brand crust mix from Walmart - and it turns out amazing! And I didn't think it tasted like Val's. It was more like Pizza Hut's without the grease.

Pumpkin Chocolate Chip Muffins

Thank you for a wonderful recipe!! These are really good!! I added about a cup of chocolate chips, so they were pretty chocolately, but yummy nonetheless! I didn't have ground cloves, so I added extra cinnamon.

Mom's Zucchini Bread

This was awesome! After I started, I discovered I only had a little under a cup of white flour. So, I substituted 1 cup plus 2 T whole wheat flour for each cup required, making it 1 cup white and 2 cups, 2 T wheat flour. This changed the consistency, so I dumped a little applesauce in until it looked right (maybe 1/4-1/2 cup). It came out perfect and moist and delicious! Thank you so much :)

Guacamole

This was really excellent. I took it to a women's party and got many rave reviews. My only complaint is that the recipe says it will serve 4 people, so I doubled it. However, I altered it a little bit as I saw fit: I only put 1.5 limes in, instead of 2; 3 romas instead of 4. I thought the lime flavor was far over powering (but I liked it for my taste). And it ended up serving about 15 people at the party, and I still had a full bowl (15ish servings) to take home! It did not brown at all for me the next day, which was a plus because I enjoyed it so much!

Broiled Tilapia Parmesan

I thought it had excellent flavor, but overall I thought it was too buttery and rich for such a mild fish. I will probably make this again, but I will reduce the butter.
