BBQ Pork for Sandwiches

Grilled Lamb with Brown Sugar Glaze

We tried this last Sunday night, and I nearly cried when we plowed through the chops before dinner hit the table. Had I known how much I loved these, I would have cashed in my IRA and bought all the chops in the store. A more economical choice in the future will be to buy a butterflied leg of lamb and do it up family style. I imagine that this rub would be awesome on veal as well.

Rempel Family Meatloaf

So yummy! We are having it for dinner again tonight. I basically stayed with the recipe, but found out too late that I didn't have any steak sauce on hand--oh well it still tasted great. This is a terrific "sandwich" meatloaf.

Chicken Breasts with Lime Sauce

This was absolutely delicious, but I did change a few things. First I used full boneless breasts and baked them (instead of frying) at 400 degrees for 20 minutes I sprayed the tops with PAM Olive Oil to brown the tops. Secondly, I used 1/2 of the lime juice and (like many others) used only used 3 tbsp. of butter in the sauce. It was great. I paired the dish with couscous cooked in lime juice (1 lime) and chicken stock. I mixed in honey (2 tbsp) and fresh mint from the garden. My 9 year old said it was "crazy good".

Smokin' Scovilles Turkey Chili

SOOOOOO GOOOOD! First suggestion--double the recipe. We loved it so much, there was not enough left for left-overs for 3. I only changed 2 things. First I added two packets of hot chocolate. Secondly, I used frozen corn and only added it in the last 10 minutes of cooking. We all agreed that the corn really didn't add much to the flavor, so you could omit it. Note of caution--as always, wear food gloves when working with habaneros.
