Black Bean Spinach Pizza

Wow! This was great! I was so surprised when I first bit into it, because I thought it would taste like a typical mexican dish. But somehow this combination of flavors ends up tasting much more complex, almost gourmet. I think it's one of the best things I've ever made. I did make a few substitutions, due to lack of ingredients on hand, but I don't think these substitutions drastically changed the basic flavors. I used a couple of Costco whole wheat rollups instead of the pizza crust, which I brushed with olive oil. I used Chipotle Tobasco for the hot sauce. And I used parmeggiano reggiano instead of monterey jack. I added a little leftover rotisserie chicken for my meat-loving husband. Also, FYI, I used good quality Vermont sharp white cheddar cheese. I used the food processor to pulse the black bean mixture, added the onion to that and about half the salsa to smooth it into a paste. Again, I know these were changes to the original recipe, but I just thought the food processor was easier than the mashing and chopping by hand. Thanks for sharing this wonderful recipe.

Fava Bean Salad

Peanut Butter Fudge Bars

I just made these and took them to a covered dish supper. Everyone raved about them. They are very rich (thus the word "fudge" in the name). I followed the recipe exactly. They came out with a nice crumbly base, and sort of a gooey chocolate filling. Next time I will add a 1/4 tsp. of salt to the chocolate mixture - to balance the sweetness of the sweetened condensed milk. Also, I wonder if butter might be good instead of oil in the cake mixture part - anyone tried that yet?

Candy Bar Bars

I thought this bar was really good, but I think it could be better. Next time I make it I'm adding a little salt to the oatmeal mixture, maybe 1/4 tsp, and a little salt to the chocolate/peanut butter spread, also probably 1/4 tsp. I agree with another reviewer that the vanilla could but cut in half. Also, be sure to press down hard when "patting" the oatmeal mixture into the pan. Otherwise, they will fall apart when you cut them. I tried the suggestion of coating with graham cracker crumbs (smashed a graham cracker in a ziplog bag, then dropped a square in the bag and shook around), and it helped tremendously with the messy factor, without changing the taste.

Pumpkin Dump Cake

This version of dump cake was great. I've tried the cherry pie filling/pineapple version before and it is way too sweet for me. However this one is just right. I did make an interesting substitution though. I was out of canned pumpkin, so used a 40 oz can of sweet potatoes, drained. I just added the chunks of sweet potatoes to all the other ingredients and used an electric mixer to mash the sweet potatoes and mix everything at the same time. I took it to a potluck dinner and got great reviews. Thanks for the recipe!

Ramen Coleslaw

The leftover salad is great heated up the next day. The soggy noodles seem "right" once the dish is hot. Just microwave a serving for about 45 seconds.

Teriyaki Sauce and Marinade

This sauce is wonderful! I used it for lettuce wraps - tossed chopped rotisserie chicken with diced water chestnuts and stuffed in lettuce leaves. Delicious!

Sherry's Red Velvet Cake with Cream Cheese Frosting

It's so hard to find a red velvet cake that matches memories of the cake when I was growing up. Today, so many of them are dry and flavorless, or taste like chocolate cake. This one captures the flavor of what I remember - not quite white, not quite chocolate - it tastes like... Red Velvet.

Spaghetti Squash with Pine Nuts, Sage, and Romano

This recipe is fantastic! Based on other reviews, I eased up on the sage. I added 1/2 tsp. of rubbed sage, and it was perfect. I used walnuts because I didn't have the pine nuts. Thanks for this very original and wonderful recipe.

Peanut Butter Fudge IV

I used this as the filling for Chocolate covered peanut butter balls, along with Ghirardelli Candy Chocolate. Everyone raved over them. I did freeze the peanut butter balls for 20 minutes prior to dipping them in the melted chocolate.

Easy Spinach Lasagna with White Sauce

Thanks for saving the custom version. I made this for my vegetarian sister in law and family and they all loved it (including the very particular 6 and 9 year olds). I used the Classico Sun-dried tomato Alfredo Sauce, as suggested by a reviewer of the original recipe.

Ginger Snaps II

A friend of mine made these cookies last night and I fell in love with them. The only differences she made were to use 1 Tablespoon of ginger, and substitute real butter for the shortening. I will be making these soon. The tablespoon of ginger really gives the cookies the true zing of a ginger snap! Love it!

Marinated Flank Steak

I've tried this marinade on flank steak, back strap from a ram, and just now on a new york strip steak. It has been fantastic on all of them. I bet it would be great on hamburgers too. This will be my go-to recipe for marinade. Thanks!
