Sweet Potato Souffle I

This recipe has made me the superstar of Thanksgiving – people wait for this to arrive. Up until I had this dish I had never encountered a sweet potato side that I actually liked! The flaked coconut addition really makes this dish unique and TDF. I do make some modifications to this recipe to cater it more to my own personal tastes – I reduce the white sugar to ¼ c. otherwise this dish is way too overwhelmingly sweet, I also reduce the butter in the soufflé to ¼ c. and the butter in the topping to ¼ c., I add cinnamon and nutmeg to the soufflé mix, and I substitute pecans for walnuts in the topping. Thank you so much Ricki for proving that sweet potatoes can taste good!

Bacon Avocado Burritos

Made this for my husband and mom and they both really enjoyed them. Did not fry the tortillas in egg however, I just don't fry food. Instead I warmed the tortillas on a skillet and added scrambled eggs to the avocado/bacon filling. Also added a splash of hot sauce when scrambling the eggs to give the burrito a little bite.

Five-Cup Fruit Salad

Made this, except swapped the sour cream for vanilla greek yogurt, and added walnuts & nectarines and it was awesome. Creamy, tangy, and sweet. Would make an excellent healthy breakfast with the yogurt swap (and maybe minus the marshmallows...)

Freezer Caramel Drizzle Pie

OH.MY.GOD. So good (!), and decadent tasting. Only thing I added was a drizzle of hot fudge and a 1/2 c. of chocolate chips. My family devoured this pie!

Roomali Roti

The simplicity of this bread and the lack of need for rise time makes this one a my favorite quick breads when I am cooking Indian foods (or making wraps for dinner). My husband frequently requests I make roti bread after trying this recipe. I always add garlic powder and use kosher salt for added flavor. Make sure to roll it thin enough that it still puffs up but remains pliable after being cooked. If it seems too hard after cooking try putting it in a paper bag and some of the trapped steam may help soften it.

Chantal's New York Cheesecake

This is a dense lovely cheesecake, comparable to the kind you would get in a restaurant. Anytime I make this it is an instant hit with anyone who eats it. The only thing I do different is grate some lemon zest into the cream cheese mixture to give the cheesecake a slight lemon undertone. Thank you for sharing this recipe!

Delicious Black Bean Burritos

These may not look pretty but with a few changes to make them a little less bland they are yummy and easy. I add 2 tablespoons hot taco sauce to the mix as well as ½ tsp. cumin, salt to taste, and some corn. At the end I add some lime juice (a personal preference) and diced avocado.

Naan

This is not exactly authentic naan, but it does make a yummy flatbread that accompanies Indian food well. You definitely should try it with the garlic (it's delicious that way), just saute the garlic first before adding it to the dough for improved flavor. Also after I brush the cooked naan with butter I lightly sprinkle on some kosher salt, it seems to compliment the garlic.

Day Before Mashed Potatoes

These get made for nearly every holiday now -- they taste great (only kind my DH will eat now) and being able to make them ahead of time is a lifesaver. I do used reduced fat cream cheese/sour cream and it tastes just as good -- however I tried the fat free sour cream/cream cheese one time in it and it tasted unpleasant - so stick with reduced fat. I also chop fresh chives into mine for added flavor and color.

Caramel Popcorn

I made this as written (which for me is rare) and OMG is it awesome!! It was a hit at my daughter's birthday party, and I couldn't stop shoveling it down. This is the best caramel popcorn I have ever encountered -- thank you so much for this recipe!

Brown Sugar Meatloaf

I am long overdue to review this recipe, as my family (especially husband) absolutely adore it! They will accept no other meatloaf at this point. The only change I make is I puree a 1/4 cup onion and a 1/4 c. bell pepper for a little more nutrition and taste.

Mall Pretzels

Great recipe, made them for a halloween party so I shaped them into "pretzel bones" (essetially pretzel sticks with curled ends) and they were a hit. I had no issues with the dough, it shaped out lovely and tasted divine! Thanks for the recipe!

Whole Grain Waffles

These taste so much better than I thought they would! I followed the recipe as written mostly but with just a few changes: I ommitted the wheat germ and used oats instead, I added blueberries, and I also added 1/4 tsp. cinnamon to the batter. My kids even loved these, which considering how healthy they are means they are going to become a staple in my home.

French Baguettes

This is such a wonderfully simple baguette recipe that tastes not only divine, (especially warm from the oven) but also authentic. It surpasses anything you can buy at a grocery store stateside. These make awesome sandwiches! Thanks for this recipe!

Roquefort Pear Salad

I would give this recipe 100 stars if possible, it is that divine. I was convinced I did not like blue cheese until I had this salad, and lets just say I have been converted. All the flavors and textures go so well together, from the sweet crunchy pecans to the smooth buttery avocado it is heaven in your mouth, trust me! I just wish it was lower in fat (sigh).

The Best Rolled Sugar Cookies

This is now my go to sugar cookie recipe for my kids, and it absolutely tastes melt in your mouth awesome. The only change I make is instead of vanilla extract I use lemon extract (I love the lemon zing it gives the cookies) and I also always refrigerate the cookie dough overnight to facilitate easier rolling.
