Satiny Chocolate Glaze
Added a little more corn syrup to produce a glaze that poured well. No issues microwaving it 20 seconds at a time until smooth. Poured it onto the cake about 20 minutes before serving so it was still warm and gooey when we ate it, and it had a nice, rich texture. I used high quality chocolate chips and the flavor is definitely semi-sweet chocolate, pretty intense, I felt like it was balanced out well with the sweet fluffy yellow box mix cake I poured it over. I will make this again when I don't have cream for true ganache.

Gingerbread Cake with Lemon Glaze
This is a wonderful, moist easy cake with perfect texture. It's so nice to have a festive winter dessert that doesn't take butter. The glaze over the warm cake is the perfect touch.

Whipped Cream Frosting
I don't know why I haven't reviewed this recipe -- I've been using it for over 3 years now. It's a soft, light casual frosting to swirl in billows nice and thick. I actually prefer to frost the cake the night before serving and let the frosting settle a bit in the fridge, it's still light that way but just a bit denser. It goes particularly well with cakes containing citrus flavor or filled with lemon curd. Leftover frosting is great on strawberries. You MUST beat the cream cheese and sugar mixture until it's smooth as silk.
