Roasted Cajun Potatoes
Delicious!!! I didn't have shallots, used minced onions. Even the kids loved it and they don't like anything. Will definitely make these again.

Spanakopita (Greek Spinach Pie)
AWESOME Recipe. Everybody loved it. I followed the recipe except I did use more layers of Phyllo. Thanks for the great recipe.

Mexican Omelet
Absolutely delicious. I used a mixture of cheddar and jack cheese, other than that, I didn't change a thing, made it for Sunday brunch and everybody raved about it.
