Lasagna Roll-Ups

Loved this idea. Easier to serve than lasagna, great presentation, but takes just as long to make as a lasagna. I used ricotta cheese, added some mozzerella to the mixture as well as some chopped spinach. Definitely will make again and again and again!

Too Much Chocolate Cake

The first time i made this I didn't have a devil's food cake so I used a moist chocolate cake mix. Didn't have sour cream so I used plain yogurt. I used 1/2c oil and 1/2c apple sauce. Turned out fantastic. Very moist, very yummy. Making this again tonight and will tweak again based on what's in the fridge and pantry!

Chocolate Banana Bread

Great recipe! I'm not a big banana fan, but what else do you do with ripe bananas? This was a big hit with all that tried it! Will dfinitely make it again!

Red Velvet Cupcakes

Great recipe....but is this really what red velvet cake tastes like? I made a recipe years ago with buttermilk and less cocoa and I ended throwing everything out because they tasted horrible. These pretty much tasted like chocolate cake with a tangy icing. I'll definitely make again.

Slow Cooker Chicken and Dumplings

I thought it was a pretty good recipe. I sprinkled the chicken with sage, poultry season, salt and pepper. Used chicken broth instead of water and added garlic more salt and pepper, rosemary and a few bay leaves to the mix for more flavour. Threw in some potatoes and carrots. 1 can of biscuit dough was more than enough.

Marshmallow Fondant

I'm reluctantly giving this recipe 5 stars as I didn't find it as easy as others made it out be. I don't think I came anywhere close to using 2 pounds of confectioners sugar, had to keep adding water until I got the right consistency/texture. Instead of using butter or shortening, I sprayed my beater and hands with PAM....worked for me. I will definitely make again, should the opportunity present itself again.

Blueberry Crumb Bars

I'm giving the recipe 4 stars based on the fact that the bars turned out. I followed the recipe with the exception of using half brown sugar and half white. Perhaps I would've liked them more had I used butter, but I didn't have any softened. I might try the recipe again if I have blueberries on hand.

Peachy Moist Muffins

Just made these....similar to a cake recipe I have. Love that there is no oil in this recipe. The only change I made was to add the extra 1/2tsp of baking powder and I added cinnamon. I used very ripe fresh peaches and once incorporated into the thick batter, it did loosen up....no additional liquid is required. It's a keeper!

Oat Bran Muffins

I was pleasantly surprised with the outcome of these muffins. This was the first time I've baked with applesauce, I've always been skeptical, but not anymore. I followed advice of others and used whole wheat flour and cut back on the oil. I added blueberries and raspberries. Definitely a feel good muffin!

Baked Spaghetti

Very good recipes, Kids enjoyed it. Made two smaller batches and froze one. I thought it would hold together better because of the eggs, like a spaghetti pie, but no matter, it was good. The process reminded me of making baked ziti or lasagna, but not as time consuming as lasagna. I added garlic to my onion and meat....it's such a versatile recipe...so many options. Looking forward to making this for company!

Creamiest Rice Pudding

Excellent recipe. I used skim milk and it turned out great. For those who added extra sugar, I don't understand...I actually thought the pudding was a little on the sweet side and thinking of cutting it back the next time I make it.

Donut Muffins

The concept is good, I took the advice of one and cut back on the nutmeg by 1/4 tsp, but i think that was a mistake. While they tastes good, I could only taste a hint of nutmeg and my were a little on the hard side. Perhaps I over baked a touch, or are they suppose to be that way. I will try again.

Easy Indian Butter Chicken

I gave 4 stars only because of the modifications. In an effort to healthify this recipe even more, I used Becel margarine instead of butter and used a moderate amount (1/4-1/3 cup). I used a can of coconut milk instead of cream/evaporated milk. I cooked the chicken partially with the onions and garlic after caramelizing, then added the sauce that I had simmering in another pot. Sauce was a little on the thin side, but will simmer longer to hopefully reduce. Smelled great, tasted quite nice. Will definitely make again and again!

GA Peach Pound Cake

While I thought the cake was "good", it wasn't out of this world. I too thought it was lacking in the peach flavour department even though I added more than 2 cups of peach. Wondering if a little cinnamon would've helped? I'm sure i'll make it again, but will modify a little.

Fudge Puddles

This is a great recipe. Made them today as part of my Xmas baking. Definitely agree with others with regards to doubling the "cookie" batch. I didn't but, saved the left over chocolate filling (in fridge) and will make more. As for baking time, I'm in agreement with others that 14-16 minutes is way too long. I baked mine for 10 minutes and they were perfect. The only issue I have with the recipe (being Canadian and all) is the can of condensed milk. I had to open two of our "Canadian" cans to make 14oz (1 3/4cups). On a positive note, the extra milk did not go to wate as I mixed coconut in with the extra milk and made macaroons!!

Old Fashioned Coconut Cream Pie

Thank you to all of you for your suggestions and "tweaks". I made this pie today using a can of coconut milk adding half and half to make the 3 cups and the cornstarch suggestion. The coconut milk just makes sense and the cornstarch is something I use to make puddings in general so another no brainer. The pie filling was very simple and came together nicely. I used a Keebler ready made shortbread crust as I was a little short on time. I had left over pudding as the crust I believe is only 8 inch. Lucky me! I will definitely make this again, but the real test will be my guests!

Baked Ziti II

It was good, but I have to agree with the reviewer who said "boring". I found it to be a little dry, perhaps my fault. The kids and husband enjoyed it. I layered the dish adding provolone in the middle and also added mozzerella on top. I personally prefered the other Ziti recipe with the sour cream, but I would make this again for the family, but would definitely have to add extras (meat, spice) to make it my own. Good base recipe!

Classic Gingerbread Cutouts

my first time making gingerbread cutouts and I was not disapointed with this recipe. The main reason I chose it was because the dough did not require refridgeration. Came together easy, rolled beautifully. I kept a careful eye not to over cook the boys...absolutely key in producing soft cookies. Made icing with icing sugar, milk and vanilla mixed to the right consistency. I will definitely make this again.

Baked Ziti I

Overall it was a great dish. Easy to make, easy to assemble. Wasn't sure what to expect taste wise with the sour cream, but I really enjoyed the tang. Kids ate it up, hubby not so much. Tons of leftovers which I froze. I'll most likely make this agian for a larger crowd, but will also try another recipe in hope to please the entire family!
