Huckleberry-Lemon Scones

This was excellent. The texture is just perfect-not too flakey, not too cakey, but just right. In proper All Recipes fashion, I did make a few changes based on availability of ingredients. I used blackberries instead of huckleberries because we don't have huckleberries in Arizona. I hand cut the berries in half so they wouldn't be too big for the scone. Other reviews also said that they could be kind of tart, so I used 4.5 TBS of sugar instead of 3 TBS because my berries weren't particularly sweet. I didn't have half and half, so I used whole milk. And I haven't decided if I'm going to glaze them or not-I think they're perfectly yummy even without the glaze. It really makes exactly 12 nice sized scones-more if you make minis. But these will fly off the plate, so you better start by doubling, rather than having to go back and make more like I am doing.

Spaghetti Squash Medley

This was really excellent. The only thing I did differently was to increase the garlic (we love garlic) and I added half of a diced bell pepper, which I microwaved for 2 minutes. It was really really good. It was filling, and nutritious, and looked great, too! It received rave reviews from both my dad and husband, both of whom I think would rather have a meat-based meal. And it's great for our hot Phoenix summer-no oven required!

Roasted Eggplant and Garlic Hummus

This hummus was easy to make, and came out with a somewhat decent texture. I liked that it's quick to make and that the ingredients are affordable. However, the hummus was very bland. After making it according to instructions, I had to doctor the recipe up quite a bit to make it enjoyable. This might be a good base, but I would not serve it as-is. I give it two stars for affordability, accessibility, nutritional value and texture. It severely lacks in flavor.

Whole Wheat Banana Nut Bread

This was very good. The texture was just right, which was a pleasant surprise given the wheat flour, which often makes things too heavy/dense. I used Agave nectar instead of honey for diabetic concerns, and used unsweetened applesauce instead of oil, but left the rest of the recipe as-is. The only change I'll add next time is to add more banana--for being banana bread, it was not very banana-y. I baked the recipe in muffin tins. It made 18 muffins and they were done in 30-35 minutes.

Grain and Nut Whole Wheat Pancakes

This pancake is very very good. Given its high grain content, it's surprisingly moist. I did use no sugar added applesauce instead of the oil and I added 2 TBS of flaxseed and it was still very tasty. I thought having crunch in my pancakes was a little odd so next time I may throw the walnuts in the food processor for a finer chop but otherwise I'll make these again the same way. We topped them with fresh strawberries instead of syrup.

Chantal's New York Cheesecake

Delicious Ham and Potato Soup

This recipe is an absolutely perfect solution for holiday leftovers! I had both ham and potatoes left from our Christmas dinner and this used up the last of both. I made the recipe as written, except I substituted 1 cup of cream I had left over from holiday baking, and for personal preference we garnished it with cheddar cheese. The thick and creamy texture, the simple but satisfying taste and the ease and expediency of prep and cooking were all divine! We're definitely adding this to our winter recipe repertoire! Thank you!

BBQ Chicken Pizza

I make a pizza almost identical to this recipe in my own kitchen too and it's always a big hit! My recipe does not include peppercinis and I use a sweet sauce because I don't like spicey. I use a boboli pizza crust. Everything else in my recipe is the same as this one. It's quick, easy and tasty. I put the cilantro under the cheese to protect it from wilting. I jazz up the pizza a little by adding flavor to the chicken. I cook my chicken by brushing a piece of foil with BBQ sauce and adding salt and pepper to taste. Put chicken on top of foil and brush top side of chicken with BBQ sauce and add more salt and pepper. Fold up foil to make a sealed packet. Put packet on a cookie sheet and bake at 350 for 50-60 minutes. Take chicken out of packet and let cool before shredding. Add several tablespoons of BBQ sauce to shredded chicken to coat chicken evenly. I also broil the pizza for 3-4 minutes on low broil to give the chicken and onion a little extra crisp.

Oven Roasted Red Potatoes

With some doctoring, this was excellent. We wanted a more proportionate seasoning-potato ratio so I cut mine in to eighths. Remember to adjust your cooking temp if you do this. I did 20 minutes at 450 and 20 at 350. I also lined a cookie sheet with foil, and laid a baking rack on top of that and laid the potatoes skin side down on that so that the excess oil could run off and be caught in the cookie sheet. I too thought the recipe called for too much oil. For added flavor I added garlic and fresh rosemary. I sprinkled salt, pepper and parsley flakes over them after they were laid out. I also let the potatoes marinate in the seasonings for a while before baking. The end result was very delicious and though I doctored the recipe, I still give the original 5 stars as thanks for the inspiration. We had a few left overs and I just heated them in a dry skillet the next morning for breakfast--very yummy!

Carrot Cake III

After reading all of the reviews, I expected to enjoy the best carrot cake I've ever had. I found this cake to be pretty bland, and a little on the heavy side. I would have liked a richer, more textured and spicier flavor. At the end of the day, this wasn't much better than box mix, which takes a lot less work! I was disappointed.

Cran-Orange Bran Muffins

These were above-average for bran muffins. The orange flavor noticeable and pleasant, and the cranberries are an excellent compliment. I increased the amount of orange peal for a richer orange flavor. My only main complaint about these is that they're still pretty dense-par for the course for bran muffins and these most certainly could have been worse. It's a nice way to dress up bran muffins but that's about it.

Apple-Feta Tossed Salad

The salad is excellent and the walnuts are a perfect touch. I was also hesitant about the sugar/pepper combination but was pleasantly surprised. The dressing is TERRIBLE. It's very sour-there is too strong a proportion of vinegar to everything else. I tried rescuing it by cutting it with a little oil and adding more sugar but in the end I threw it out and we all ate the salad with no dressing. Fortunately it's a good enough salad to stand on its own but I will be trying something else next time.

Honey Bran Muffins

These turned out wonderfully, even and especially for bran muffins! I substituted one cup wheat flour and one cup white flour, and 1/4 applesauce and 1/4 oil, and I used black raisins because it's what I had on hand and even with the deviations, they came out wonderful. They're moist and flavorful, and compared to other bran muffins, are very light. I made these because I'm trying to discipline myself to eat better. Suffice it to say, I'm usually the last to reach for a bran muffin. But even I have enjoyed these heartily and it's no chore at all to enjoy one for breakfast.

Easy Mint Chocolate Chip Ice Cream

Absolutely flawless. My only deviation was being slightly more generous with the chocolate chips. This is so good. We'll definitely make it again, and soon, I hope. I also like that it calls for milk instead of the more expensive half and half that a lot of recipes call for. 5stars in our book!

Kabob Marinade

I found this recipe just about an hour and a half before we were scheduled to eat. So, my meat only had about an hour to marinate. I was quite pleased and probably wouldn't marinate it longer than that because the marinade is very salty and I think too much longer in it and the meat would have been too salty for our taste. I made kabobs of steak, green pepper and pineapple and marinated both the pepper and the meat and was very pleased with how it turned out.

Roasted Garlic Grilled Vegetables

This recipe was very good. I wished that the vegetables were more flavorful-I will probably be more liberal with the seasoning next time. I made a mixture of summer squash, zuchini, red, yellow and green bell peppers, white onion, garlic, green beans, brocoli, and snow peas and grilled them in my grill basket. They were very very good and the only thing I'll do differently next time is add more seasonings.

Chicken and Dumplings III

This was excellent. The broth came out thick, like a stew, rather than like a soup and I actually liked it that way. I added carrots to mine, and added 2 cups extra water to accomodate and it was still thick. It was a tad on the salty side, but I did substitute 1/3 real chicken broth and celery salt as seed was not on hand. I'm sure without those changes it would have been good. Next time I'll make more dumplings (the dumplings themselves really only served the two of us, with a half serving left over) and increase the liquid. But it was very flavorful and very easy for tihs first time dumpling maker. My husband(whose favorite food is chicken and dumplings!) loved it!
