Almond-Crusted Tilapia

Chocolate Applesauce Cake

Easy Tilapia with Wine and Tomatoes

I made in the broiler because my BBQ isn't ready for the season yet. It was OK, but I felt that it needed something. It was nice and light though. Maybe I didn't love it because it was too healthy. ;)

Roast Chicken with Rosemary

This was my first attempt at a whole bird, so I read through a lot of the reviews before starting. Per the advice of other reviewers, I rubbed the bird inside and out with olive oil prior to stuffing and seasoning. I added several cloves of garlic (crushed) to the insides along with the onions. I also added two wedges of lemon, but I think I will forego these next time I make the recipe. I also cut slits in the top and stuffed them with bits of garlic. (Obviously, I love garlic.) I put it in a 425 degree oven for the first 15 minutes before turning it down to 350 for the remainder of the cooking time. It came out delicious and looked beautiful. It was very moist and juicy. I was so proud of myself! Thank you for a delicious recipe. My husband and I will be picking on this for the next few days which means I'll get a break from cooking on a weeknight. :)

Honey Roasted Red Potatoes

These were delicious! Per the other reviewer's advice, I added about 1 tbsp of extra honey. I cooked them a bit slower, because I had a roast in my oven. I finished them off by putting them under the broiler to crisp up at the end. Delicious!

Spinach and Potato Frittata

Delicious! I did modify it a bit though. My medium pan filled up quickly, so I transferred to my large skillet. I thought that 6 potatoes was an awful lot, so I only used 3. I used sweet onions instead of green onions and added a tomato to the mix. I also used feta cheese instead of cheddar. I cooked it on the stovetop for 5 minutes and then put it in the broiler a couple of minutes to brown the top. Delicious. The beauty of a recipe like this is that you can add anything you like to it like an omlet. Thanks!

Lemon and Cilantro Shrimp

This was a nice change. I think the lemon flavor makes it a nice summer recipe. I did alter it a little bit. I changed the portions for 2 people and added 2 cloves of garlic to the pan. I also thought that I didn't need all of that lemon zest. I had a 1/2 lemon leftover from the night before, so I added the zed of 1-1/2 lemons and the juice of one lemon. (Only half the zest of what the recipe called for.) I thought it was enough. I served over linguine with olive oil and garlic. Would make again. Tasty.

Blueberry-Lemon Pound Cake

I was a bit disappointed with how this turned out based on the rave reviews. I kept it in the oven longer than the recipe called for, but I think I still took it out too early. It was still a bit gooey on the bottom. I definitely goofed a bit, but even the cooked top part was a bit dense and there wasn't as much of a lemon flavor as I had hoped there would be. I don't think I'd make this one again. Sorry.

Spicy Baked Sweet Potato Fries

I didn't have taco seasoning, so I used three potatoes, with 1 tsp of paprika, 1 tsp of cayenne pepper, and 1 tsp of chile seasoning. It was tasty but way too hot! Will definitely try again, but will cut my spices down significantly.

Delicious Artichoke Dip

Made this for a party last night and it was a HUGE hit! Yummy! I multiplied the ingredients by 1-1/2 and used an 8x8 pyrex dish. I also added extra parmesian on top. Delish!
