Shrimp Scampi I

I haven't made shrimp in quite some time so I was a little nervous, but this came out great. Very simple and delish! I added a little lemon, dried oregano, and fresh parsley to the pasta. The only thing I did different to the shrimp was broil it for the last 2 minutes. We will definitely add this to our household recipe rotation. :)

Cheesy Apple and Oat Meatloaf

This is delicious! I followed exactly and went extra heavy on the apples. On top, I mixed brown sugar and ketchup and I think it was a good addition. I have also tried with a turkey/pork combo. It was good, but I think it is better with beef/pork. Great way to get rid of some apples after a fall apple picking trip. :)

Raspberry and Strawberry Buckle

OMG! This is soooooo good! I just picked a bunch of strawberries and didn't know what to do with them, so I tried this recipe. So glad I did! I made with all strawberries, because I didn't have raspberries. I also made with Greek yogurt and it was fine. I can see making this with all different types of fruit. Oh, and I listened to other reviewers and did not keep it in the oven much more than an hour. I took it out around 63 minutes and it was fine. It was hard to tell, because the berries made the cake really syrupy, but I'm glad I took the gamble. I think it would have burned otherwise. :)

Irish Soda Bread

This was my first attempt at an Irish Soda Bread and I am pleased to say that it came out great! I baked it in a skillet and used only 2 cups of raisins because that is all I had on hand. I think 2 cups was enough. The dough is really wet and sticky and I wasn't sure if I kneaded it properly, but it was fine. Don't be turned off by that the messy dough. It is worth it!

Oatmeal Jam Squares

I love a bar cookie recipe, because I don't have to be a slave to the oven all day. Just tried these for the first time and I think we have a winner. So easy to make and they were delicious. Here's a tip for those of you who think they are too crumbly, press the bottom layer into the pan firmly before spreading the preserves on top. I think you need to set the cookie for it not to crumble. I used apricot preserves. I'm looking forward to trying other flavors. Thanks! :)

Apple Brownies

OMG, yum! These were a huge hit. They were so moist and delicious. I altered recipe slightly, but not much. I doubled all ingredients and baked in a 9x12 pyrex dish, because I don't do small food. LOL! I baked a few minutes longer to accomodate. I did not melt butter, but just creamed it. I also added a little extra spice, because I think these taste good in all apple/pumpkin recipes: dash of allspice, dash of cloves, and a LOT of ground nutmeg. I then sprinkeded a little cinimmon and sugar on top before baking. DELISH!!!!!!!

Santa Fe Style Chicken

This was a tasty change from the typical BBQ chicken. I never marinated with yogurt before and I think it kept the chicken really moist. I didn't have chipolte, so I used cayenne instead. Was not disappointed. Will make again.

Pecan Pie IV

I followed the recipe exactly with the light syrup and it was delicious! It was plenty sweet. I think the dark syrup would have been too much. Another reviewer suggested adding a bit of salt. I might try that on the next round to cut the sweetness a little, but it is delicious and super easy as is. Thank you for a great recipe!
