Kale and Quinoa Salad
I can't believe how good this is!! I left out nuts and used chickpeas and left out the feta and sprinkled some in parm. Massaged the dressing into the kale and added the quinoa (cooked with onions and garlic) when it was hot. I could eat this salad all night!

Winter Harvest Curry Stew
I adjusted servings down to 5 and ate it all myself in two sittings! Subbed spinach for mustard greens and omitted curry and ginger (since I didn't have any). I also sauteed the onion in coconut oil before adding stock and veggies. Thought it had a really good flavor and was hearty. The trick is simmering it till the broccoli and cauliflower start to crumble. This gives the illusion of a thicker soup. For me, that was about 20 minutes.

Mussels Mariniere
Really good. I, as well, was afraid the wine might over-power the mussels so I used half wine, half broth (hot water and chicken bullion). Also, I didn't have thyme, but I did add some lemon juice, extra onion and garlic, and Emeril's Italian Essence. Also, SHRIMP! My husband and I thought this recipe was very flavorful. Served over whole wheat fettuccine. Would definitely make again.
