Butternut Squash Soup with a Kick

Reviewed: Jan. 30, 2012
I used this recipe as a base for a really thick stew of veggies that were about to go bad. I baked the squash ahead of time, then blended it with the listed ingredients, using 1 can of coconut milk instead of evaporated milk + coconut. I then let it simmer with potatoes, leeks, and portabella mushrooms and thinned it a little with milk.

Quiche

Reviewed: May 5, 2011
This was fluffier than I expected of a quiche, but it thankfully did not boil over. Next time, I will ignore the little voice saying "add carrots!" They were wrong.

Spinach Turkey Roll

Definitely a keeper. It wasn't the greatest meatloaf ever, but so many brownie points for the visual appeal! More garlic next time.

Tasty Buns

Very easy to make (and customize with lots of curry powder), but I found that the dough didn't rise very much. Maybe the house was too cold.

I mostly just needed to check the temperature settings. This is a simple recipe that was exactly what I was looking for!

Tzatziki Chicken

When baked, the tzatziki no longer tastes like tzatziki. It was OK - very moist, but we won't make this again.

Favorite Banana Blueberry Quick Bread

Very tasty and smells great while cooking. We used blackberries, walnuts, and butter instead of blueberries, pecans, and shortening.

Slow Cooker Tapioca Pudding

Reviewed: Apr. 20, 2010
Very tasty and convenient to make in the slow cooker, but it developed a thick crust that my roommates hated (I liked it). I used large boba (pearl tapioca) from an Asian market.

Grandma's Gingerbread Pancakes

We were out of ginger, so I substituted an equal amount of nutmeg. Absolutely delicious with just butter on top!

These were fun to make, but nobody liked the taste or rock solid texture.

Excellent Oatmeal Cookies

These were very tasty for such an easy recipe! High altitude adjustments: reduce white sugar to 1/3 cup, increase flour to 1 1/2 cups, temp to 350.

Deluxe Macaroni Dinner

I found this to be incredibly bland. If I make it again (because it was fairly simple) I will experiment with spices.

Tom Ka Gai (Coconut Chicken Soup)

Reviewed: Jul. 29, 2009
Yummy, but next time I'll skip the cilantro and add mushrooms instead. I could see myself eating this for dessert! Substitutions: chicken broth for water, nix the turmeric, add equal sugar with fish sauce.

My friends came over just to make this! Adjustments made: skip the tamarind, use rice vinegar + soy sauce instead of white vinegar, use fish sauce instead of soy sauce, use udon noodles instead of rice noodles (couldn't find them in town). Next time, I won't use as much salt.

With high altitude adjustments, this turned out perfectly even though I didn't bother beating the egg whites or adding mixtures slowly.

Maryland Crab Cakes II

Reviewed: Jul. 24, 2009
I used imitation crab and basil instead of parsley. Boyfriend loved it, I felt it was missing something, possibly salt and more mustard (we used mustard, not mustard powder). Chilled as recommended, and kept the crab in chunks. Will try again, but with only 4 minutes in the broiler (5 minutes burned them).

Very tasty. I used two eggs to make a half batch. I tried to change things up by using chocolate chips alongside the raisins, but the raisins were much better.
