Peanut Butter Vegetable Chicken Soup

I am giving this 3 stars. Why? Well simply because most of these reviews say you wont notice the peanut butter, but that is ridiculous. It is a quite obvious flavor. I added some more chicken stock and some curry, even then it was very obvious... Not to say it was bad, just that if you think you are going to sneak this by someone who doesnt like peanut butter-- HA HA Good Luck. I did however enjoy this soup.

Shrimp Fettucine

Love it. I used white wine instead of chicken stock, added marinated artichokes and omitted the parsley (hubby hates it)... Next time I will add some baby bella mushrooms as well. What did it for me? The lemon juice. Use a fresh lemon... its amazing!

Artichoke and Sun-Dried Tomato Chicken

Kept the recipe almost the same... added a can of sliced black olives, a jar of marinated artichoke hearts-- in addition to the can of artichoke hearts. I diced the chicken and threw it in the sauce to simmer with half a box of cooked penne and a splash of dry red wine. If I made it again I would make my own sun-dried tomato pesto, the jar stuff was high in sodium... hence the wine addition the offset that. And I must say this dish is more filling than it looks! YUMMY!

Guacamole

Kielbasa with Peppers and Potatoes

A tasty meal after you tweak it just a bit! I started out skipping the oil, and cooking the kielbasa and potatoes for about 20 minutes on medium heat. Then on medium high heat for five minutes, browning everything up. I added a splash of Corona to deglaze the pan and then added the peppers. I also added onions, portobello mushrooms and a few shakes of red pepper flakes. Cooked everything until the peppers were tender and then served them with a liberal amount of salt. My husband was raised a vegetarian and never touched meat until he was 21, this was his first encounter with kielbasa and he absolutely loved it!!! We will make this again for sure!

Salmon with Dill

We love salmon and we loved this recipe! I followed advice of another and sauteed the butter with some ev olive oil and white wine and garlic and onions. then poured the mix on top of the salmon after I salted, peppered and thymed the filets! cooked them about 20 mins at 400 degrees. I served it with the dill sauce half mayo-half sour cream and some side noodles-- a quikie box mix "butter and herb" we also enjoyed a nice pinot noir "BlackStone reserve" about $20 it was a wonderful one year anniversary for us and the baby slept the whole time!!!! LOVED IT!!!!

Skillet Meatloaf

Well, not super impressed with this recipe. My husband didn't like the tomato soup idea, so we used Emerils marinara sauce... All in all it was okay, but it was more like a couple of giant meatballs. If i made it again, it would be with pasta!!!

Bahamian Baked Grouper

I did not marinate the filets, instead I simply poured lime juice on them added the veggies and popped them in the oven. I cooked it exactly the same amount of time and at 350, but the filets were a bit dry... Maybe 10-15 minutes less would have worked better? The flavor was nice with the onion, tomatoes and peppers. Light and healthy. I would just check it earlier than leaving it for a full hour.
