Local Kine Wontons

I made these last week and they were good, I would have prefered a little more of the crab taste but it was still good. I freezed them before I fried them and made Hot and Sweet Dipping Sauce, it was a great match. Next time I make them I will probably add more crab.

Caramel Pecan Pie

This pie was great, especially warmed up with a scoop of vanilla ice cream!! When I made this I changed a few things, I lowered the sugar to 1/3 cup, exchanged the milk for bourbon, and upped the pecans to 1 1/2 cups. And make sure you cook it long enough so that the consistancy is just right.

Southwestern Egg Rolls

These taste even better than the ones at Chili's and are better for you if you bake them!!! I made the filling as stated and ended up with 8 egg rolls, I did not freeze them but put them in a 450 degree oven for about 12 minutes. I flipped them halfway through so they would be crispy on all sides and served them with Amy's cilantro cream sauce from this website. My husband gave them rave reviews and wants me to make them again soon!!

Hot and Sweet Dipping Sauce

This is the best asian dipping sauce I have found. It is perfect for wontons, eggrolls, lumpia and whatever!! I did add about 3T of cornstarch mixed with 2T if water to the sauce while is was simmering and that made it the perfect dipping consistancy for dipping.

Spicy Chicken and Cilantro Wontons

I made these last week, it was a little tedious but well worth the effort. for me the recipe made about 60 to 70 wontons. I did freeze them before I fried them. They turned out great and I made it with the Hot and Sweet Dipping Sauce from this website.

Lime Chicken Soft Tacos

Who knew chicken taco's could taste this good! I marinate overnight and saute when dinner time comes around. Once I put it in a crockpot on low while I went to work and it turned out just fine.

Colleen's Slow Cooker Jambalaya

Yummy!!! I have made this twice (so far). I love coming home to this cooking in the crock pot because all I have to do after work is make rice then it is time to eat. I usually do all the prep work the night before and keep all the components (veggies, chicken, sausage, liquid w/ spices) separate until the morning when I just throw it in the crock pot. One thing I change is I don't add the shrimp. Also, Tony Chachere's Original Creole Seasoning is fabulous sprinkled on top when serving. EDIT: 19 Nov 07 - I just made this and to solve the "soupy" problem I used a turkey baster to take all the liquid out and used it to make rice in a seperate pot. When I previously tried to add rice to the crockpot it came out undercooked and there was no more liquid to finish the rice. But now after I make it seperatly then mix it, everything is perfect!

Unbelievable Chicken

This chicken was good, but not great. I made it according to the recipe only using tenders instead of breasts, when it was done cooking I thought the mustard and vinegar smell was a little overwhelming, but once the chicken cooled it smelled better. I used it in a tortilla wrap with spinach, tomato and ranch dressing. It turned out OK but I don't think I will make it again.

Six Can Chicken Tortilla Soup

This soup is really easy!!!! And with just a few changes it was perfect for my family. I did not subtract anything, I just added 1/2 a diced onion, 1 can condensed cream of chicken soup, 1 tablespoon cumin, some salt and pepper. I finished the soup in less than 20 minutes! I think next time I will add more chicken and beans, to make it more like a chili.
