Accidental Grilled Chicken Salad

Reviewed: Jan. 12, 2009
Loved this recipe; my husband found it! I'm not a fan of traditional chicken salad, so this was right up my alley! Didn't have many mushrooms on hand, so I grilled what I had and then dumped a small can of mushrooms into the mix when I added the mayo. Added a bit of garlic as well and served on fresh whole wheat bread with avocado slices and american cheese; it was delicous and now a fav in our house!

Buckeye Cookies III

Reviewed: Dec. 7, 2008
These were, good but a lot of work and overly sweet - sweeter than a peanut butter cup even. Next time I'll add a full cup to a cup and a half of graham cracker crumbs in place of the same amt of sugar that should mellow out the sweetness a bit. My husband is a true choco-holic too so it take a lot for something to be too sweet for him!

Stuffed Pork Chops with Gorgonzola and Apple

Reviewed: Dec. 7, 2008
This was very yummy, my husband really enjoyed it as well. I used about 1C to 1 1/2 Cup of apple for our stuffing, when it cooks down there didn't seem to be much there. I also dusted the pork shop with seasoning salt and garlic pepper once it was stuffed before baking. Also, on the sauce mine never really browned, so I added two teaspoons of cornstarch to the last 1/4 C of chicken broth and it thickened right up with no impact to the flavor. Loved the sauce might try it on pasta with chicken soon!

Marbled Pumpkin Cheesecake

Reviewed: Dec. 1, 2008
For all who read reviews and tweak! This recipe is amazing! I made it for Thanksgiving to take to the neighbors and everyone raved! I adjusted the recipe to serve 18 and it filled out my springform perfectly. Eggs and cream cheese were brought to room temp before I started. I followed the recipe as changed with the new serving size exactly. Except: Added 1 tsp pumpkin pie spice to the pumpkin filling. Note - If using your mixer use the paddle attachment not the wire wisk. Also, still only need about 3/4 C filling to marble in. Baked at 325 for 70 minutes, with a pan of water on the lower rack - couldn't do a water bath my springform pan leaks. When the time was up, I turned the oven off and opened the door. Left in the oven cooling for 1 hr. Then moved to the counter to cool another 1 1/2 hrs before moving the fridge. ABSOLUTELY NO CRACKS! Crust and filling was perfect! Great recipe, has been requested for Christmas as well.

Tomato Gorgonzola Soup

Reviewed: Jul. 7, 2008
Loved this soup! My husband really enjoyed it as well. I used blue cheese instead of gorgonzola because it was what I had. I also used 1/2 cup instead of 1/4 because we love the flavor of blue. I used 1/2 & 1/2 instead of cream and used skim milk and 1/3rd less fat cream cheese to cut the fat a bit. It was delicious. I also did the onion, red pepper and canned diced tomatoes in my mini cuisianrt to help with the consistency of the soup! We will definately make this again.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jul. 7, 2008
This recipe was amazing! I made it for my co-workers for a big meeting we were having and everyone raved. The cookies stay soft even days after they've been made. I did follow all the advice by the one reviewer who said to add 2TBL vanilla and the 2 Tsp Baking Powder. Also, I made my cookies pretty big and was worried 12 min wasn't long enough, it was though, the cookies were perfectly!! Great recipe, it may become my signature cookie!
