Zesty Quinoa Salad

Very good. I only needed a 1/4 teaspoon salt. If you add a full teaspoon, you'll be sorry :)

Lentils and Rice with Fried Onions (Mujadarrah)

Very good. I cooked my rice and lentils separately (I prefer to use my rice cooker). I took the suggestions of others and added bouillon cubes and cumin to the lentils while cooking. I also used two onions and added cinnamon (you will need far more than 10 minutes to properly caramelize them). That truly makes the flavor. I only used to tablespoons of oil - I can't imagine six are really needed. Served with plain Greek yogurt.

Lentil Soup

This soup is OK with modifications. I took many other peoples suggestions and added more veggies and used a 28 oz can of crushed tomatoes. I also used vegetable broth instead of water. I still found this to be just ok.

Cheeseburger Soup I

I thought this was good, but not great. In defense of the actual recipe, I did use mostly lower-fat versions of many items (Low-fat mild cheddar, 1% milk, ground turkey, etc). Next time I'll choose a different cheese and I"m sure it will have more flavor.

Pumpkin Bread IV

I scaled this recipe down to only make one loaf - I figured I'd make sure I likde it before I committing to three loaves. Based on other reviews, I cut the sugar back by 1/3 cup, and subbed apple sauce for half of the oil. I also topped the bread with walnut pieces. I always omit nutmeg from my recipies as I simply do not like the flavor. The flavor was great and the bread was still moist.

Crustless Spinach Quiche

Cheater Pot Pie

I'm not a fan of canned chicken, so I used two chicken breasts and seasoned them. I also skipped the butter as the biscuits have enough richness & calories on their own! Other than that, I didn't make any changes. I really enjoyed this recipe.

Orzo with Parmesan and Basil

Great recipe. I add chicken so it's a main dish. I sauté with Italian seasoning, put it to the side to toast the orzo and then add it back in and follow the recipe as stated.

Asian Coconut Rice

I've never had "Asian" style coconut rice, so I wasn't sure what to expect. This reminds of the flavor of Jamaican rice & peas, just minus the "peas". The coconut flavor is subtle, as one should expect with coconut milk. I found that adding some additional salt gave it the flavor I was looking for.

Very good. I did not brown the ground beef in oil, as it already produces plenty of grease. I did need to add a little bit to cook the onions & garlic.

Cajun Corn and Crab Bisque

This was delicious! Based on the suggestions of others, I used a can of creamed corn and also added some cayenne pepper. I did not have any crab/shrimp boil seasoning, but didn't miss it. To save on calories I used half and half instead of heavy cream - this was still very rich and had great flavor. I will definitely make this again.

Delicious Ham and Potato Soup

I added more celery, onions since I really like the added flavor. I also decided to add garlic powder and dill weed and was quite pleased with the result. I didn't have any bouillon granules, so I used two bouillon cubes and that did the trick.

Creamy Chicken and Wild Rice Soup

Like many others, I added onions, celery, and carrots. I sauteed those for several minutes before adding the flour to make the roux. I used half & half instead of heavy cream to save a few calories. I also subbed some of the water with 1% milk.

African Chicken Stew
