This recipe was excellent. I have been looking for a good black bean burger recipe that my meatatarian boyfriend and I will both like and this is the one.
I made a few modifications on purpose and one out of necessity. On purpose, I subbed cumin for 1/2 TBSP of smoked paprika and 1/2 TBSP curry powder based on other recipe my boyfriend and I have both enjoyed. We found that seasoning combination worked well here.
On purpose, I omitted the onion and used sour cream and onion crackers for the bread crumbs. That gave a nice but subtle onion flavor that will likely please non-onion eaters.
Out of necessity, I omitted the egg. I did not have one on hand and did not want to wait. The mix stayed together ok considering, but I bet adding an egg will help.
I had sweet potato fries in the oven at 425 degrees so I fried the patties in a non-stick skillet with a little olive oil. They took about 5 minutes a side to get browned and lightly crisp, but I think they could have gone longer to taste. I needed two spatulas to get them out of the pan without breaking them (again, the egg would probably fix that), but all four made it to the plates intact.
The final product was so good my boyfriend and I each ate two patties, wrapped in leaf lettuce with melted jack cheese and tomato slices. They did not even require condiments. I might make them again tonight...
I may try a few other variations. If they are as good or better, I will post.
