About this Cook
I'm a 27 year old living with my husband of 3 years, Jerry. We started out in Iowa, moved to Georgia and just relocated back to my home state, Oregon. My greatest passions are my family and God, and I have a very strong love for music. I started cooking after my mother went back to work, when I was around 8 years old. I first thought it was a chore, but came to enjoy it when I realized how creative you can be with cooking. Now I love being able to prepare and and share a wonderful meal with my family and friends. Cooking is just one more way I can serve those I love most.
My favorite things to cook
I love baking, but due to health concerns, I must eat a low carb diet. So I'm learning to enjoy new cooking methods, such as grilling and pan frying.
My favorite family cooking traditions
Spending hours in the kitchen with mom and grandma as a little girl. They are the ones who instilled the love of cooking in me. I've learned so much from them both.
My cooking triumphs
Probably the first time I made pancakes. It might sound silly, but I was just a kid and I was terrified that a pancake would end up on the floor, batter side down.
My cooking tragedies
I remember one time when I was a teenager, I made a box of brownies, but forgot to add the eggs. Uh, whoops! They turned out flatter than a flitter!

Slow Cooker Creamed Corn
I used two packages of frozen corn - one white and one yellow, halved the amount of butter and used low fat cream cheese. I also chose to omit the sugar and didn't miss it at all. I served this with ham and a potato casserole for Christmas dinner and it was a hit! A few guests even asked for the recipe. This one is a keeper!

Best Beef Dip Ever
This is everything you could hope for in a recipe - fast, easy and fool proof! I always make this as directed with one exception... I use fresh rosemary - it makes a huge difference in flavor! Also, since I only need to feed two, I usually scale down the au jus by half using 1/2 cup of soy sauce and 3 cups of water. It's just enough for my husband and I and it tastes great, although I think I'll take the advice of some of the previous reviews and try using beef broth in place of the water next time.

Easy Four Cheese Lasagna
Whenever I start craving lasagna, this is the recipe I turn to! To make it more hearty, I always add a large can of diced tomatoes and a couple cloves of garlic in addition to the sauce. I also like to use the "oven ready" pasta, so I add a cup of water to the sauce so that the pasta will cook as it bakes. Leave the last layer of cheese off. Wrap tightly with foil, bake at 425ºF for an hour, remove foil and add the last layer of cheese and return to the oven just long enough to let it melt. Mmm... absolutely heavenly!
