Refried Beans Without the Refry

Flavor, flavor, flavor! couldn't be happier with this recipe. Dropped the salt to 4tsp. since several commented on that and subbed 2 c. chicken broth and upped the cumin to 1/2 tsp. Only issue I had is that my onion did not disintegrate completely as others had mentioned but was simple to dig out before mashing. Very filling and delicious.

Barley Casserole

Awesome flavor and chewy, perfect alternative to rice. Made as directed, came out a bit too salty. Could omit the salt and use reduced sodium chicken broth next time. Otherwise, love everything about it. Trying to eat more vegetarian dishes and the kids ate it without any complaints. Looked, smelled and tasted great!

Vanilla - Chocolate Powdered Sugar Frosting

made the chocolate version with 3 tablespoons cocoa and frosted a pan of brownies with leftovers. excellent taste, used real butter and the consistency was just right.

Spinach Lentil Soup

First time to do rice/lentil combo and it was great! Kids had a hard time getting past the appearance, but taste was awesome. Used 16oz. turkey sausage and added one celery stalk, bay leaves, 1/2 onion and garlic. Very wholesome and quick. Also cooked rice w/ lentils, very easy.

Apple Squares

made it last night-so quick and easy to prepare. hardest part was chopping the apples. doubled to 1 c (two small apples) and omitted the nuts and topping. had addictive crust on top and soft and chewy inside. definitely making again!

Quick Creamy Potato Soup

Amazingly simple and delicious!!! Had to mash potatoes a bit before adding cream of chicken/milk since hubby had tooth problem and couldn't chew very well. Cooked bacon and onions together then added potatoes and water on top w/out draining off fat (wasn't much anyways). The addition of cheddar cheese per another review absolutely gave it that extra "something" flavor. Perfect for a rainy night.

used a little too much onion. but even the kids ate it, who normally wouldn't touch spinach. also be sure to cream the mashed potatoes before adding spinach, i had some chunks mashing didn't take out.

so good, so good, so GOOD!! Was really easy to make, with simple ingredients. Only change made was to substitue spinach with rice - didn't have any on hand. but deee-licious!
