Chicken Katsu

I used garlic salt for more flavor and the only panko crumbs I had were lemon herb flavored so that's what I used. I used olive oil too and they came out perfect and so tasty. I served it with "Japanes-Syle Cabbage Salad" (on this site) and white rice. This was like a restaurant quality meal!

Chex® Muddy Buddies® -- Gluten Free!

I made this for my boyfriend's mom since she is on a glute-free diet. I think she will love this! Make sure you add the vanilla AFTER you melt the ingredients in the microwave. This recipe is delicious. I used crunchy peaunut butter and like the little bits of nutiness! I think next time I'll use extra crunchy. I didn't have a 2 gallon bag so I used a clean tall kitchen trash bag. I just put everything in the bottom of the bag and twisted in the middle leaving plenty of room for the shaking. I was a little worried since the bag was not see through but it worked perfectly.

Roasted Garlic Cauliflower

My oh my, what a woderful way to eat cauliflower! I could eat this everyday! I didn't have parsley and didn't use salt & pepper either. I tossed the rest in a bowl, extra garlic of course, and arranged the pieces on a parchment lined cookie sheet to roast without covering. I only had the Kraft canister of parmesan which worked wonderfully. Nothing burned and it had a nice cripsy texture. I will make this often from now on!

Heart Attack Eggs

This is the only way to eat breakfast eggs as far as I'm concerned. I've always eat them this way whenever I have bacon in the house. Bacon, eggs, warm flour tortilla, and a cup of coffee - great way to start the weekend!

Turkey Enchiladas

I followed the recipe exactly except for the onion, I used more. I was worried because it does not call for salt. I was surpised that it tasted salted and figured that must have come from the canned chiles. The flavor was good and I used it as a filling with a warm flour tortilla, tomatoes, cheese, lettuce and avacado. Since it was just me, I put the rest in the freezer to make tacos during the week. I'm looking forward to using it for a quick dinner when I don't have time to cook.

Applesauce Brownies I

I doubled the cocoa and they still didn't have a good chocolate flavor. Putting the chocolate chips, sugar and walnuts on the top was a mess. They fell apart when I cut them so I had to let them sit out all day in order dry out a bit and then cut them. I wouldn't call these brownies at all.

Baked Teriyaki Chicken

Definitely cut down on the sugar - WAY too sweet! And double the sauce. I used fresh ginger and next time will use lite soy sauce. I covered the chicken with foil for the first 30 mintues and while it was cooking, I stir-fryed some chopped bell peppers, an onion and some sliced mushrooms for about 3-4 mintues. Then for the last 30 minutes of cooking, I took the foil off and tossed the veggies in the pan and covered everything with the rest of the sauce. Cooked it uncovered & served t with rice. If it were not for the dish being too sweet because of the darn sugar, it would have been perfect!

Fresh Strawberry Upside Down Cake

I've made this a few times now and the latest for 4th of July. I lightly sprayed a glass 13x9 pan with cooking spray. Doubled the strawberries and used an egg slicer to help chop them up and mashed about half, then mixed with fat free strawberry jello before spreading on the bottom. Instead of oil in the cake mix I used applesauce to cut some calories. Then I served it with lite whipped topping and sprinkled with fresh blueberries. This was my red white and blue dessert - fabulous!

Beef Yakitori

Wonderful, just wonderful! I used chuck meat and it came out so tender and tasty. With the leftover marinade, I boiled it for 5 minutes. Then added more soy sauce (light), brown sugar, chili paste, pepper, water and red wine vinegar to my liking and boiled it another minute. Then added some paste make with water and cornstarch to thicken. Served it with grilled onion, red & green bell peppers and steamed rice - BETTER than a restaurant!!!!

Absolutely Fabulous Greek/House Dressing

Everyone loves this dressing. It reminds my bf of the Olive Garden dressing. I served it with greek salad twice now and will use it for pasta next time. Using the calculator provided, I modified the serving to 15 and the amount fits perfectly in my cruet.

Ranch Dressing II

Oh my, this is a really wonderful recipe. To cut the fat I used light Best Foods mayo & light sour cream. I also added a squirt of extra virgin olive oil and red wine vinegar - everyone loved it and were amazed that it was lowfat.

I baked as a previous review did for 40 minutes on 400 but it came out too dry. I think 350 would have been much better. And this recipe has NO salt - so I added a couple of shakes to bring out the flavor. Also, two lemons is too much, one lemon next time!

Rock Salt Encrusted Prime Rib

The stores were out of rock salt so I used kosher. When I took it out to patch the cracks I must have missed one because after it had cooked a lot of the juice had leaked out and my prime rib overcooked but stilll very delicious but a little dry. I poured some aus just over it once cracked and it soaked it right up. I did scrape some of the sticky coating so it wasn't so salty. Next time I will line the pan with parchement paper because the salt/flour casing stuck to the bottom of the pan and was a royal pain to get off!

made this with peaches and served on top of vanilla frozen yogurt - on butter, cut cornstarch in half and added 1 tsp. vanilla after taking off the heat - heavenly!

Kung Pao Chicken

Good recipe but I tripled the sauce, cut the chicken in small cubes, added cubed bell pepper, onion and carrot. Next time I will and some pineapple and make a lot more sauce. I used regular chili paste and it was plenty hot. Making the chicken and veggies the same size is how they serve in resataurants.

Easy Pie Crust
