Easy Cheese Ball II

Everyone loved it! I didn't have ranch mix so instead I added about a teaspoon dried chives, teaspoon dried parsley, 3/4 t. onion powder, ground black pepper and a dash of cayenne and some chopped green onion. Used Kraft triple cheddar shredded cheese. Rolled in both roasted pecan bits and cripsy bacon. Made two cheeseballs. Each feeds 8-10 for an appetizer.

Hot Pizza Dip

I don't use the meat and sometimes forget to put in the olives. Goes fast, everyone loves! Use with tortilla chips or crackers.

Graham Cracker Crust I

Great! Make in food processor. One plastic package of graham crackers(9) is the right amount. I only put in 1/4 cup sugar, plenty. Yum:)

Sour Cream Chicken Enchiladas

Buffalo Chicken Dip

Delicious! One thing I changed was baking my own chicken breasts and then shredding. Make sure and layer the cream cheese and Ranch (I used "Light" versions of both) on the bottom, then Chicken and Red Sauce, then shredded cheese. Very yummy, will make again and again. Great with celery sticks!

Whole Wheat Pancakes

This is the first pancake batter recipe I have made from scratch that I have actually enjoyed. They are light and fluffy. I used canola oil instead of butter and made my own buttermilk with about a tablespoon of lemon juice added to skim milk. Folded some fresh blueberries in the mix and added thinly sliced bananas after putting on the griddle. Kids love them too! A definite keeper!

Cha Cha's White Chicken Chili

Great! Whole family loved it. I reduced the jalapenos to about 1 T. (will use the rest for the super yummy popper dip that's on this site). I cut out the green chiles (because I don't like them that much), used 1 teaspoon cumin, and just dolloped some low fat sour cream on top and sprinkled with cheese. A very low fat recipe if made that way. Made this way I thought it was a perfect amount of spice and great with corn bread! Thanks for the great recipe!

Robin's Quinoa with Mushrooms and Spinach

This was really good. For lack of time I made some changes to the original recipe. I did not have mushrooms or much time so I made the recipe a "one step" by sauteing the onion and garlic in the oil, then I added the spinach (all I had was frozen), then the quinoa. I then added all of the liquid ingredients and thyme (all I had was dried). I also didn't have any goat cheese or other crumbled cheese for that matter, so left the cheese off all together. This was our first time to have quinoa and it was great. The kids loved it! Even the one that doesn't like spinach loved it and had seconds! It was a great side dish with our dinner of talapia and fruit. Thanks for the recipe, will definitely make again!

Chicken Pot Pie IX

I ran out of time tonight and didn't get the crust made so had this as chicken pot pie soup. The family loved it! I made a couple changes. I added some chopped red potato and don't like peas so used a little frozen spinach for some green color. I doubled the broth, milk and flour to make more sauce. I simmered the veggies and chicken in 4 cups chicken broth so that I could use the 3 cups broth left over for the white sauce. Also added garlic powder a little thyme and pepper. Left out the extra salt as chicken broth is salty enough. Very yummy! Will be making this a lot this winter!!!!

Easy White Chili

Used shredded chicken breast and left out the green chiles only because I don't care for them. It was wonderful! I did puree a can of beans as suggested, but I think I would prefer it without. Also would like the smaller Navy Beans than Great Northern. Will make again and again. Thank You for the recipe!!

Four Cheese Macaroni

Good but not my favorite mainly because I like a creamy texture on my macaroni and cheese which I can get with a lot less trouble by just using American cheese and milk on the pasta. For the heavier cheesy/butter type macaroni this is good.

Jalapeno Popper Spread

This stuff is awesome! If you like poppers, you will love this. I took it to a superbowl party and of all the cream cheese type dips there it was the most popular. I used the 4 oz. can of jalapenos and it was really spicy, but when I commented I might make it with less everyone said, "NO!, this is perfect!" Thanks so much for this recipe. It's really easy and REALLY YUMMY!

Raspberry Vinaigrette Dressing

I used about 5 organic frozen raspberries as well and regular white vinegar because that's all I had. I used half olive and half vegetable oil, but next time will use all vegetable oil because I think the flavor goes better with the sweet. I also used only half the sugar called for, as recommended, although the only dijon mustard I had was honey dijon so that added a little sweet. I whirred it up in the blender and it was great! Everyone at the dinner party loved it -- even my kids loved it and ate salad, which they usually don't do! This would be great for a Valentine's Day lunch salad with the pretty pink color...
