Microwave Peanut Brittle

This really was delicious. The only thing is that the baking soda needs to be stirred in very quickly. Then the mixture needs to be poured out AS SOON AS the baking soda is stirred in. The directions "stir until light and foamy" are a little misleading. It doesn't become light and foamy as you stir. . . it becomes less light and foamy. It was hard to pour out, but ended tasting very good. *update: I have now made this recipe numerous times. At first I gave it 4 stars; however, if you follow the hint I gave above, the recipe is 5 stars. The Peanut Brittle is fantastic. My grandmother is THE candy-maker, and my mom says that she cannot tell the difference between mine and my grandmother's (she slaves away all day on her's). Also, this recipe is delicious topped with chocolate. All you have to do is put a layer of semi-sweet chocolate chips (or whatever kind of chocolate you prefer) on top of the brittle as soon as you pour the mixture out onto the cookie sheet. The chocolate will start to melt; simply spread the chocolate over the peanut brittle with a spatula. Absolutely delish!

Apple Pan Betty

Yum! This was delicious, made even better by being so easy! I doubled the recipe. I only used 4 tbsp of sugar for the doubled batch and it was perfectly sweet. I used wheat bread and for the doubled batch it was 3 pieces of bread. I will definitely make this again! Thanks for the wonderful, easy recipe!

Annie's Fruit Salsa and Cinnamon Chips

Oh my! Amazing! The store I went to was out of raspberries, so I skipped those. I used strawberry all fruit preserves. I wanted to make this healthier, so I used baking splenda instead of sugar and splenda brown sugar blend instead of brown sugar. I used whole wheat tortillas. I was afraid that they wouldn't work out too well, but they were awesome. I also used splenda for the cinnamon sugar on the tortillas. I combined 1/4 cup splenda with 4 teaspoons of cinnamon and sifted it over the tortillas. I sprayed both sides of the tortillas with the butter flavor Pam, stacked them and cut into wedges with a pizza cutter. Then I sifted on the cinn sugar and sprayed again. They turned out perfect at about 10 minutes. This was amazing! One more thing. . . I saw that people were saying that this recipe takes too long. I bought a Vidalia Chopper at Bed Bath and Beyond and it is awesome! It makes preparing this recipe a snap! I use it with so many things, guacamole, salsa, anything you need to chop! I highly recommend it for this recipe.

Delicious! I have made these twice, once with onion, once without. To be honest, they were just as good without the onion and about 1000 times easier! This will be my go to recipe without the onion!

Cream Cheese Mints

Wow, so delicious and fun! I made these for a Christmas party that I'm going to, and they are amazing! I did use 4 ounces of cream cheese instead of three for this recipe. I used 5-6 drops of food coloring per batch. I used rubber candy molds in the shape of a Christmas tree and jingle bells to shape them, which was time consuming but very fun, and they look so cute. The key to using the candy molds: refrigerate dough for a bit, then fill the candy mold with granulated sugar, then dump out the sugar (you want the inside of the mold to have a layer of sugar). Make marble sized balls out of the dough, then roll them in granulated sugar and press into mold. Remove the candy from the mold by just putting it over the cookie sheet lined with wax paper(sprinkled with sugar)and press it out. After a few, they will start to just fall out. I made the original recipe with peppermint and also made some using cinnamon oil. . . it is hard to pick a favorite, but my mom LOVED the cinnamon! Definitely worth the time!

Truly Key Lime Pie Ice Cream

Oh my!!!!! Completely delicious! I made this recipe three times this summer for different events. People could not believe how awesome it was. It is now my Mom's all-time favorite ice cream. I have never had ice cream this creamy. Definitely let this ice cream cool to room temperature after you cook it, then refrigerate it over night. I fully believe this makes the texture incredible. I will make this recipe a few times every summer!

EAGLE BRAND® Peanut Butter Fudge

Excellent! Super creamy and very easy! I poured mine in a silicone baking dish the set up. It made it extremely easy to get the fudge out when I was ready to cut it. This was my first time to make PB fudge and it was a success!

Award Winning Peaches and Cream Pie

Wonderful! This was very easy to make and tastes fantastic. I took this to a potluck and got numerous requests for the recipe. I doubled the original recipe and made it in a 9x13. There was not a bite left at the potluck!

Big Soft Ginger Cookies

Oh my!!!!!!! This cookie is amazing, and I don't even like ginger snaps! I made these for a potluck at school, and everyone loved them. I loved them so much that I made them again, two days later, because I was craving them again. I also substituted orange juice for the water, as suggested by other reviewers. This is the perfect fall/winter/holiday cookie, and they look PERFECT!

Artichoke & Spinach Dip Restaurant Style

I made this for a potluck, and it was the first thing gone! It is ridiculously wonderful! I used the whole package of cream cheese, like others did. Also, I just used minced garlic, and I topped it off with a layer of the shredded mozzarella. That makes it extra delicious. I will make this often. It is the best spinach and artichoke dip I have ever had. . . that includes the ones at restaurants.

Dietetic Banana Nut Muffins

Theses were great! My husband and I loved them, especially for a healthful muffin. Instead of 1 cup all-purpose flour and 1/2 cup whole-wheat flour, I used 3/4 cup of each. Also, I use whole-wheat pastry flour when baking. . . it turns out much better than whole-wheat flour. I will be making these often!

This muffin is very good. I used the Splenda brown sugar blend instead of the brown sugar. I think these muffins tasted better the next day. Very good recipe that I will make again. . . just not quite 5 stars.

Mexican Chicken Kiev

Absolutely fantastic!!! This was so good, and my husband LOVED it! The only thing I did differently was leave out the green chiles, because my husband doesn't like them. It still had plenty of flavor though. I cannot say enough good things about this dish. I loved it!
