No-Noodle Zucchini Lasagna

Fantastic recipe. Used store bought sauce but added tomato paste. Still came out a runny mess (even after baking zucchini strips in oven as others recommended) but it tasted out of this world. Used both ground beef and turkey sausage crumbles. My 10 year old and husband had seconds and my daughter asked for leftovers the next day. Will definitely make again. Just gotta figure out how to make it less runny.

Slow Cooker Lasagna

This was outstanding and we will definitely be making this again. Like some of the other reviewers, I added onion and garlic to the ground beef and also added italian seasoning. I used canned tomatoes and blended it in a blender. Added the tomatoes, tomato paste and about 1 cup of store bought sauce I had leftover in fridge. I used a 2 1/2 qt slow cooker and ended up using all of the sauce and filling but only 1/2 the box of noodles. I only used 1/2 the mozzarella cheese in the filling (and threw in some more italian seasoning for flavor) and when I did the layering, I sprinkled additional mozzarella cheese on top of the cheese mixture. I used an entire 16oz container of cottage cheese because I don't use it for anything else so I didn't want leftovers and I did add 2 eggs as others suggested. Cooked on hihg for 2 1/2 hours and then lowered for 1 1/2 hours more. It was PERFECT! Noodles were not mushy (not even the leftovers the next day!) and it filled the crockpot to the rim. Next time, I think I will use the 6 qt crock pot I have and double the filling and meat. The meat sauce was a littel runny as I spooned it on to the cheese but I think that helped the noodles and was the reason I didn't have to add extra water. Delicious!!! Thanks so much!

Risotto alla Milanese

This is a very rich dish. My husband makes it whenever he wants to "fancy" up the meal. Not difficult to make and goes with anything. Chicken, fish, beef. An excellent side dish that will impress your friends.

Apple Stuffed Chicken Breast

This is a really easy weeknight meal. It sounds complicated because you have to pound out the breasts and stuff them but the stuffing really does taste like Thanksgiving and the apples give a great crisp flavor to the stuffing. My husband doesn't like fruit with his meat but he didn't mind the apples in the stuffing. If you have a hankering for Thanksgiving but don't want to go through the fuss of all the fixings, this is the dinner for you! Only gave it 4 stars because you really do have to like fruit in your meal or this may not appeal to you as much.

Chocolate Ganache

If I could give this recipe 10 stars I would. It is so easy and I have thrown out all other frosting recipes in my cookbook. It is a rich chocolate glaze that melts in your mouth. If you let it sit and cool, it will be the best chocolate frosting you will ever make. I've had tons of requests for this and it never disappoints. A no-brainer recipe. Thank you so much!!!

Chocolate Chip Cake Mix Cookies

This is a WONDERFUL go to recipe. I've made different variations. So far, friends and family like lemon cake mix and white chocolate chips. I LOVED using sugar free chocolate cake mix and sugar free chocolate chips. You can always use egg substitute and applesauce to cut even more calories. My mom is diabetic and this was a treat for her. Thanks again for this easy, go to, recipe.

Black Bottom Cupcakes I

These were good. I tried to save time & used a box mix. My mix was a little dry. The cream cheese mixture was excellent. Contrary to what others said, you can soften your cream cheese in the microwave & it'll be fine. Put in microwave for 30 seconds at 40% power. It's perfect! When mixed with egg & sugar, it wasn't runny at all.

Guacamole

I have never made guacamole without mayo before. It was OUTSTANDING!!! I will never make another guac again. I made the recipe exactly as is. I had some guests over and they practically licked the bowl clean. Serve this with D's Famous Salsa and YOU...ARE...SET!!!

I would have given this 10 stars if I could. ABSOLUTELY the best salsa I've ever had. I was just hoping for close to the salsa from my favorite restaurant but it was better. I used the Mexican stewed tomatoes, as suggested, but will probably add a chile to it next time for just a little heat! The flavor was stupendous. Thanks so much. I'll be sharing this with everyone I know!

Strawberry Streusel Muffins

These muffins were good, not great. They were VERY moist which is why it got 4 stars and not 3. I did as others suggested and increased the strawberries to 2 cups and added cinnamon. They are not a sweet muffin like I was expecting. Very fresh. The only sweet was the streusel topping and I think you could find a better recipe for the topping in other recipes on this site. Overall, people really enjoyed them and they were gone quickly but I like my muffins a tad bit sweeter. Thanks for the recipe. I'm still keeping it in my recipe box! Just have to tweak it a little bit more.

Onesy-Twosy Cookies

This is really an outstanding cookie. The only reason I gave it 4 stars instead of 5 is because the cookie is a crispy cookie and I like my cookies chewy. The flavor was very peanut-buttery. I used chunky peanut butter instead of adding peanuts and added white chocolate chips. My husband said they were the best peanut butter cookie he had ever had. The whole batch was gone in 2 days. Thanks so much! Will be printing this out for the cookbook with all my favorites. Makes it a little easier to grab. :)

This was great! Did remind me of stroganoff but more mushroomy! Make sure you measure the salt. I just sprinkled it on and it was a little saltier than I like. The mushrooms add their own salty flavor. Will be keeping this one handy. Fast & easy!

Quick Chick!

I doubled the gravy part, used 2 dry packages of gravy and doubled the water. It was very tasty. My husband said that this would make the absolute best Chicken Tortilla soup. I have to agree and have re-labeled it as such in my cookbook. We took leftover chicken meat the next day and threw it in the leftover "gravy" with some tortillas and had a great soup! Thanks. The actual chickent was good, too. Very moist. But I'm keeping this filed with the soups.

Blackened Tilapia with Secret Hobo Spices

I loved the spice mixture that you rub on. It did have a little kick and I happened to have rubbed both sides of the fillet (which were thin). That made for a really spicy fish. I loved it but my 7-year-old couldn't take it. If you love spicy food, I highly recommend rubbing both sides. If not, keep it to one side and maybe go lighter on the cayenne. Thanks for this keeper!

Baked Pork Chops I

This is a great recipe. I renamed it Stroganoff Pork Chops because it is a lot like the stroganoff sauce you make with beef. Be careful not to use a dry white wine like sherry because the wine flavor can be too strong. I've made it with Chardonnay and Pinot Grigio and like the flavors much better. Thanks for adding another recipe to my box!

Cranberry Glazed Pork Ribs

Did not love this recipe at all. Did not do on BBQ and that may have been the problem. I cooked it in the oven and the sauce was watery. My family did not like the taste of the "glaze." Sorry. It seemed like a wonderful variation for ribs but we won't be making this again. I did give it 2 stars because it may have been better on the grill. I'll never know...

Chewy Chocolate Chip Oatmeal Cookies

These are BY FAR the best oatmeal cookies I have ever had. I made the adjustments as others recommended: 1/2 cup butter & 1/2 cup shortening, 1 1/2 cups flour, 1 tsp baking soda, 1/4 tsp salt and cinnamon (just sprinkled it in). I also refrigerated the dough for 30 minutes prior to baking. Super moist and not dry. I did not add nuts and doubled the chips but I know this would have been excellent with both. Definitely keeping in my recipe box! Thanks so much!!! I have a feeling we'll be eating a lot more oatmeal cookies this fall & winter.

Double Chocolate Biscotti
