Wicked Good Veggie Chili

Look no chili recipe ever! I subbed yellow peppers for green peppers and added like triple the spices...but seriously good chili! YUM.

Scallops with Roasted Garlic Cream Sauce

This was a very good sauce! I made a vegetarian version of it, using veg stock...substituted fresh basil for parsley, and added a little parmesan to thicken it (since I only had milk). I whisked in a tbsn of butter at the end to finish the sauce and served it over artichoke ravioli...complete with sauteed asparagus and artichokes! Seriously, by far the best way I've ever roasted garlic...turned out perfect! Thank you for the recipe. :)

Wisconsin Five-Cheese Bake

This was so good. My husband and I were pleasantly surprised the this version of macaroni. (I'm always struggling to find a really good mac and cheese recipe.) I used monterey jack cheese instead of provolone just cause that's what I had. Also, did not have heavy cream...instead made a roux with butter flour and milk. I combined butter and homemade bread crumbs from a regular loaf of bread and spread them on top of the dish before baking. This was so delicious! Thank you for this one.

Delicious Chickpea Curry

Seriously good! I cubed butternut squash and yukon gold potatoes instead of the yams. (only cause I used what I had) I just added minced garlic to the pot and minused the ginger altogether. Usually not a fan of cinnamon, but it works in this recipe. Also substituted golden raisins for the regular ones...(my husband eats them like candy.) Deelish :)

Red Garlic Mashed Potatoes

perfect measurements...i usually have trouble with the amount of potatoes vs. milk and whatnot...used less butter though and more garlic. I cubed the potatoes before boiling, which I think is the best tip I've heard...turned out awesome, with a tiny bit of texture. YUMMY!!!
