Hasty Chocolate Pudding

I will never make chocolate pudding from a box again. This is AMAZING and SO EASY!! Followed recipe exactly. Easy to customize for single servings (to keep yourself from eating 4 in one sitting!!). And by the way, this is so yummy warm, you'll have to exercise serious self-restraint to allow it to cool. IDEAS: cinnamon and cayenne for Mexi-pudding; cardamom and pistachios for Indian-pudding; peppermint extract (half as much as vanilla - it's stronger) and crushed peppermint for a Christmas pudding; Kahlua instead of vanilla for a grown-up pudding; a tsp peanut butter (after cooking) and crushed peanuts; or even orange zest (after cooking). The possibilities are dazzling. Note: DO keep an eye on this as it cooks as it WILL BOIL OVER if you walk away. It's practically inevitable. :)

Megan's Granola

I make this all the time because it magically vanishes in our house!! This is addictive! The proportions work very well, and of course, substitutions are easily made. I use whatever nuts we have on hand. Craisins are delicious, as well as any other dried fruit you like. I also like to sub a cup or two of cheerios or special K for the oat bran to give another dimension to the granola. **Note** to get the granola to chunk, BOIL the sugar/oil mixture (I just put it in a large measuring cup and microwave it until it bubbles - less cleanup), then stir and bake as directed, but after it's toasty, pull it out and DON'T STIR ANY MORE. Let it cool. It should cool and form a large brick that can be broken into satisfying chunks. Then sprinkle the fruit into the container with the granola. **Also, for those trying to skimp, you can sub applesauce for oil/ fake sugar/ yada yada and it will taste alright but it will NOT be as crispy and scrumptious. If you're going to go to the trouble, make the good stuff and follow this recipe. It's healthy and oh so good. Seriously. Try this recipe!

Refried Beans Without the Refry

Addicting. Granted, I LOVE legumes. And there are so many ways to use these! In tacos/burritos, over rice with leftover meat (rotisserie chicken, sausage, whatever). Add a couple Tbsp tahini for a delicious hummus. Add colby cheese & cream cheese & sour cream & salsa & cilantro for a killer dip. Stir into soups for a creamy thickener. When health food tastes this good, why eat junk?? :) Also, per personal taste, add at least 1 tsp cumin. Lime juice is also a bright, refreshing addition.

Chocolate-Banana Tofu Pudding

I submitted this recipe and am glad to hear that others are enjoying it. I have two tips. I find that using a frozen banana imparts a more intense banana flavor. Plus it chills the pudding instantly so you can eat it sooner :) Also, add a tsp of vanilla if you use regular cow's milk.

Chicken Tortilla Soup I

So good! But I recommend these tweaks: use 1 heaping Tbsp chili powder, 1 tsp oregano, and 1-2 tsp cumin. LIME juice is a bright, refreshing addition. Fresh cilantro is a must. The toppings really make the dish. Also, I added several dashes of hot sauce and a Tbsp of pickled jalapeno for kick (the green chiles are not spicy). Idea: save your canned chicken broth. Boil the chicken breasts in enough water to cover plus a couple inches until no longer pink in the middle. Then just use that liquid for your stock! No sodium, no extra cost.

Spaghetti Squash I

Delish and healthy! Sauteed the onions and garlic in cooking spray (a high quality teflon pan is such a worthwhile investment!) and actually boiled the squash to save some time. Yes, I know microwaving is quickest, but in order to make it so, you have to cover the dish with celophane, which I've heard is toxic when zapped, so boiling was the next best bet. Up the basil to 3 heaping T and don't substitute dried! Also, Italian diced tomatoes in a can instead of fresh adds a nice touch. The feta taste is excellent. I love spaghetti squash, and this is an excellent recipe!!

Moroccan Lentil Soup

This was really delicious, but I made a few small changes. First, soak your own beans (I just used garbanzos) and use the soaking water for your soup stock! It is deliciously flavored and full of antioxidants. Next, saute the onion, garlic, ginger, AND ALL the spices. This will enhance their flavor. Also, about the spices, I didn't have garam masala, so I pretty much improvised the entire spice aspect and it was delicious. I used: 1/2 tsp curry, 1/2 tsp turmeric, 1/2 tsp cayenne, 1 tsp cumin, 1/2 tsp cinnamon. With the liquid, I added 3 cardamom pods (cheaper than ground; bought in bulk at farmer's market; no matter what state it's in, don't skip this - it's unique!) and 2 bay leaves. I simmered mine only 45 minutes, but I let it sit longer to let the flavors meld. Also, sprinkle a little salt at the end if you don't use canned ingredients - you'll end up with a more fresh-tasting final dish! I served this over brown rice with toasted, buttered crusty baguette. Comfort food, Moroccan style!

Easy Cajun Jambalaya

Delicious and much better than the box mixes available. Doubled the onion by personal preference, and per reviews, added 1 can kidney beans, 1 can diced tomatoes, and 1 tsp Old Bay seasoning. I cooked the (brown) rice separately and added it to simmer for 30 min. I used 2 cans chicken broth and thought it was rather liquidy, but simmering with the top off for 30 min with the added rice thickened up the jambalaya nicely. Crusty bread and hot sauce, and you've got a delicious meal in no time!

Oatmeal Whole Wheat Quick Bread

This is scrumptious. Definately will make again - dense and nutty and satisfying. Added 1/2 cup flaxseeds and 1/4 cup sunflower seeds. Don't bother grinding the oatmeal. 6-8 servings. Baked 20 min in a loaf pan lined with parchment paper - easy clean up. Will try other nuts and seeds and dried fruit next time! Or maybe olives and rosemary and sundried tomatoes...endless possibilities

Beetroot Hummus

Excellent, beautiful recipe. Save yourself the time: Wrap the beets and onions (halved and drizzled in olive oil) in foil and bake at 350 for an hour or more until tender. When they're done, use drained and rinsed canned chickpeas (save the liquid to thin the recipe in case), throw it all together, and even though this will take a while, you won't be tied to the kitchen until blending time. Also, I prefer 1/3 cup tahini, but that's a matter of personal preference. For presentation, add some chopped parsley to the top - the greenery adds appeal.

Beaker's Vegetable Barley Soup

Very good for a simple soup. Flexible recipe - throw whatever leftover veggies you need to use. Add quick-cooking vegetables near the very end to retain color. This turns into monochrome mush if overcooked.

Split Pea Soup

Cut the recipe in half, just right for 4 hearty servings. Used a Honeybaked Ham bone. Boiled it before adding that stock to the sauteed veggies and ham. A quiet settled over the table as we began to eat, followed by a chorus of "whoa"...that usually is a pretty good sign :)

Grandma's Gingersnaps

Delicious. But I like a SPICY cookie, so to this recipe I added 1/2 tsp cayenne, 1/4 tsp allspice, and 1/4 tsp cardamom. **Roll the cookie dough in TURBINADO SUGAR before baking for added taste/texture.**

Pumpkin Bread

First I made the Downeast Maine Pumpkin Bread from this site. Good, but not 2,000+ 5 stars good. This was my next endeavor. The butter imparts an excellent flavor and I will continue to use butter instead of oil, but this is still almost cakey, and I'm looking for moist. I'm still searching for that perfect recipe. I highly recommend this recipe though, just expect a cake-like consistency.

Italian Chicken Marinade

I don't even like Italian dressing normally, but it makes a killer marinade. Add fresh garlic for a more garlicky flavor. I added a tablespoon of dried rosemary. Add whatever herbs you like. Easy and delicious!

Easy OREO Truffles

For ease and short ingredient list, this recipe is excellent. My friends are all raving about my 'melt in your mouth' truffles. I only needed about 1 box + 2 squares of semi-sweet chocolate per batch (important to note if you're multiplying the recipe - of course you can always dip extra oreos, pretzels, fruit...have an all out fondue party). And definately freeze 20 min or so between rolling and dipping and again before rolling in extra oreo or they will lose shape. You can add peppermint extract to the chocolate for a twist.

Award Winning Soft Chocolate Chip Cookies

Cut the recipe in half but used 1.5 tsp vanilla and 0.5 tsp salt, white milk and dark chocolate chips, dash of cinnamon. Golf ball sized dough balls took 15 minutes, cooled to perfection. Chilling the dough before baking made scooping the dough easy and kept them from over-spreading. These are toothsome, scrumptious, chewy cookies, slightly more cakey than some recipes I've made.

Authentic Louisiana Red Beans and Rice

Simple, easy, satisfying, and perfect for feeding a crowd. I sauted the sausage and veggies to a light brown for added flavor before adding them to the beans. Note: this recipe feeds 8 HUNGRY MEN. I doubled the recipe for a crowd of 14 and ended up with enough to feed an army. Still, I'm not complaining as this recipe is easy on the purse and is really tasty.

Acceptable. I went the snickerdoodle route and was disappointed. Chocolate chips might have redeemed these "cookies," but I think next time I'll just take the extra 5-10 minutes to use flour, sugar, etc.

Delicious Ham and Potato Soup

Scrumptious!! **Saute the ham in a tsp of oil or butter until it is lightly browned and then add the onion and celery and cook until the onion is translucent. THEN add the potatoes and chicken broth. This gives an even deeper flavor. I needed to use up a bag of mixed potatoes: red, purple, and gold. Beautiful!! Had only skim milk in the house, but the butter kept it from curdling and it still tasted great. This recipe only feeds 6 as a main dish. I will definately make this again and again!
