Homemade Black Bean Veggie Burgers

These burgers are delicious! As others have said, you need to squeeze the excess water out of the pepper and onion mixture before adding it to the beans. Another tip: you can make these vegan by using ground flax seed instead of the egg. Whisk 1 tbsp ground flax seed with 3 tbsp water. Then mix in the spices like it says in the recipe. You'll get sort of a spicy paste. Mix this in with the beans and it will hold together perfectly! Honestly, when I made this recipe with egg some of the burgers cracked, but they came out perfect using flax seed.

Spicy Vegan Potato Curry

When followed exactly, this is way too spicy. The spices completely overpower the veggies and coconut milk. I couldn't taste anything but spice! If I made this again I would cut the spices in half, at least. I would recommend that you start out with less spices the first time you make it to see if you like it, rather than waste a big pot of food like I did.

Artichoke Spinach Lasagna

I have been making this lasanga for years, it was a recipe from a Betty crocker cookbook. My version uses garlic Alfredo sauce instead of tomato sauce. You have to try it this way! The Alfredo goes perfectly with the spinach and artichokes. Also, you don't need to cook the noodles first. They will cook when you bake the lasanga. This is a really great recipe that everyone I have made it for loves!

Penne a la Vodka II

This recipe makes a very good vegetarian Penne a la Vodka. Definitely stick with the heavy cream -I tried using light cream and it was not as good as when I made it with the heavy cream. I also like to add the pasta to the sauce at the end and cook it together, to thicken up the sauce a bit.

Apple Walnut Salad with Cranberry Vinaigrette

As many of the other reviews recommended, I used less onion than the recipe calls for. I used maybe a 1/2 cup and it was very good, but next time I would go with only 1/3 cup. Otherwise, this recipe is great. Even my parents who tend to like plain, boring food liked this!

Old-Fashioned Soft Pumpkin Cookies

These cookies are delicious! Definitely don't skip the icing - the cookies need that extra bit of sweetness. I originally drizzled the icing over the top but had to add more. Next time I may make the icing thicker and then spread it on with a knife! Yum!

Ultimate Frozen Strawberry Margarita

Love these margaritas! I used Cointreau instead of Triple Sec because I had it in the house. Some of my girlfriends thought they were a bit strong, but I thought they were perfect. (They still finished them off though!)

Orzo and Potato Parmesan

My husband and I love this one. I usually increase the carrots, and add a good amount of dried basil. Make sure to cut the potatoes small or it will take a long time to cook. We also like a lot of Parmesan for this one.
