Calabacitas con Elote (Zucchini with Corn)

I made this because I had a bunch of zucchini left from my garden. We actually ate this as the meal, just served in tortillas like Fajitas. The only complaint my husband had was that there was too much liquid..so next time I will cook with the lid off and let the liquid evaporate. I did use feta because I couldn't find cotija cheese. And I used frozen corn that I had on hand and it tasted fine.

Absolutely Fabulous Greek/House Dressing

This is an awesome recipe. I use the dressing to marinate veggies before grilling too. And trust the author of the recipe...it does not need to be refrigerated, if you do it is takes a half hour to thaw the oil so you can use it.

Potato Wedges with Dip

This turned out very well....I didn't time how long I left in oven..I cook by sight so I just left them in until they were brown and crispy. Oh I didn't do the dip at all...just the potatoes.

Zucchini Alfredo

Had a very good flavor. I only used half the amount of zucchini because it was just my husband and I, but I didn't half the cream cheese or the milk. If I was to use the whole amount of zucchini I would double the recipes recommendation. Very quick and easy--especially if you have a food processor with a shredding disc :o).

Vegetable and Tofu Stir-fry

My first attempt using tofu. I cheated and bought frozen stir fry veggies, I figured the sauce would make the meal anyway and I was right. My husband actually liked it.

California Chicken Spaghetti

The first time I made this my husband said it was too spicy--which is spicy considering I am the spice queen. The second time I made this I shook the Cajun seasoning lightly over the chicken, I also added a little oregano and extra garlic. Instead of fresh roma tomatoes I used a large can of petite diced tomatoes--undrained is better. I also used the basil tomatoe feta cheese to top it-yum.

Orange Curried Chicken

I messed this one up by adding too much water to the recipe-sauce was very watery, but the taste was awesome. I followed the other commenters advice and substituted soy sauce for the salt. The left over chicken is great cut up cold and put in a salad.

Chile Pork

I doubled up on the spices and added crushed red pepper and fresh pressed garlic. The nice thing about this recipe is it is a dry rub, so I prepared it on a Saturday and vacuum sealed it with the spices until Wed. It was very good--even though I used a little too much red pepper for our kids.

Zesty Slow Cooker Chicken Barbecue

This was good my family enjoyed it. I used a caribbean jerk marinade and the italian dressing. Took longer than 3 hours with my crock pot and the chicken was thawed.

Cha Cha's White Chicken Chili

This was very good and easy. Instead of having cooked chicken on hand I just cooked it with the onions and lots of garlic and lots of spices, then put in the chicken broth and the beans. It made it a quick meal to make. Served with cornbread instead of corn chip--we are from the south and it just seemed appropriate. Even my stepdaughter ate 2 bowls. God bless my husband he eats anything I put in front of him (he ate 2 bowls too)...luckily I haven't made anything he didn't like.
