Enchiladas Suizas

Double the salsa verde, don't bother with dipping the tortillas or frying them, add corn and black beans to the filling. I prefer to use the "super soft" flour tortillas (personal taste preference). This is a super awesome, fail-proof recipe and is delicious every time. I've also used beef, pulled pork, or shrimp in place of the chicken and it's delicious. These freeze well, too.

Best Fried Green Tomatoes

Super awesome! Added cavender's to my breading and used self rising flour. Also, baked instead of frying on a well oiled pan for about ten minutes per side.

English Muffin Breakfast Strata

Loved it! Actually didn't have english muffins (and wanted to use some other leftover muffins) so I went with five blueberry and five zucchini muffins, halved, and then followed the rest of the recipe. It was fantastic!

Spanish Rice Bake

I love this recipe! I've made it as listed above but have also used it as a catch-all for leftovers.... I've used leftover Thanksgiving turkey in place of the beef, added kidney beans, corn, salsa! Really anything left over in the fridge/pantry!

Pasta Primavera

I love this recipe, I always double everything, add more grated cheese (usually swiss and monterey) and add in some extra steamed veggies... super delicious as original recipe or with these additions. & sometimes I'll bake it in the oven at 350 for about twenty minutes to make everything creamy, melting and just a little bit of a crust on top. Also great with cooked shrimp tossed in!

Cornucopia

This ia an incredible idea! I made this for our Thanksgiving Day table centerpiece and filled it with fresh veggies and rolls. Everyone thought it was a great idea and it definitely added to the festive decorations. It was really easy to make and took no time at all. We are freezing ours and bringing out again at Christmas.

Big Soft Ginger Cookies

Awesome reipe, in fact, the best ginger anything recipe I have found thus far. I agree about the orange juice suggestion, I tried them boths ways (with and without) and the general opinion was the OJ ones were better, it seems to enhance the spice falvors. I also had an issue with the batter, but only in that the cookies nearly quadrupled in size every time! I made the dough balls less than half an inch each time and they come out like four inch cookies! We don't mind! They are so good, having a big cookie is ok!

Quick Gumbo in Pastry Shells

AWESOME recipe, it was quick and easy and delicious. I would suggest adding a little bit of onion and some hot sauce to spice it up. Overall, really great idea!
