Tzatziki Sauce

Creamy Corn Soup

I made it according to the directions and amounts (with the exception of 2 chicken bullion cubes in 1 cup of water for the broth), and let it simmer on the stove for awhile to thicken up. Very good, and will make it again later this winter. I didn't use canned corn - I used about 3 cups of corn that was cooked on the cob a few days ago and then scraped off and added to the soup.

Zucchini Bread II

Good base, and I changed it a bit. No oil - substituted 3/4 cup applesauce and 1/2 cup milk. Only 1 cup sugar. 3 cups zucchini. 1/4 cup ground flaxseed. I did not add the raisins and walnuts - I put chocolate chips in instead. Baked into muffins for 20 minutes.

Peppy's Pita Bread

This is our go-to for pita now! If we have them come out filled in and not hollow, we just pull the soft bread out of the crust and eat it with hummus dip. I actually prefer them to be "wrong" - I get 2 for the price of 1! Pita crusts for my sandwiches, and bread for dipping!

Strawberry Muffins

Nothing earth-shattering but it did the job of giving my daughter the kind of muffins she wanted and everyone was happy. I did add 1/4 cup of water after I had the whole thing mixed because the batter was so thick. I got 16 muffins out of it.

Easiest Focaccia Recipe

Yum! We tripled the amount of yeast and it was really light and absorbent. We drizzled olive oil on it. This would also be good with herbs mixed in which we plan to do next time we bake this, and have it with motzarella cheese and balsamic vinegar.

Ninety Minute Cinnamon Rolls

Rosemary Lemon Grilled Chicken

Who thought of using butter in a marinade? That was a disaster - it solidified the minute it touched the cold chicken, so it was very difficult to spread and only use a little at a time. Switch the butter to olive oil, and it would be fine.

Pasta Chicken and Sun-Dried Tomatoes

I used the olive oil from the tomatoes to cook the chicken - definitely gave it a nice flavor! I also used 3 cloves of crushed garlic and 2 pinches of dried rosemary when I sauteed the squash and zucchini (instead of steaming it).

Beef Cabbage Hash

It was better than we thought it would be but still pretty mild and my husband still wanted to spice it up with Heinz 57 sauce. I cooked the onion and 2 minced garlic cloves with the beef, and added Worcestershire sauce and thyme. I also nuked the potatoes for a few minutes before adding them to the pan.

Mom's Zucchini Bread

I cut the quantity of oil because I hate the film left all over the place by super oily breads. That was okay. But WAY too much sugar! You can't taste the zucchini at all! It's just another sweetbread that's way too sweet. We'll eat it but I wouldn't give the 2nd loaf away as a gift, and I won't make this recipe again.

Chile Pork

I cut the recipe in half because I didn't need nearly so much, and also added a couple of shakes of coriander. I oiled a 9x13 pan and covered it with foil while it cooked, and baked it at 325 for 45 min. It was very tender and juicy, and we ate it on corn tortillas with guacamole. Very good!

Chicken Breasts With Herb Basting Sauce

I used boneless/skinless and doubled the oil and spices because the chicken breasts I used were HUGE. I also let it marinate for a couple of hours. It's good if you like eating a big slab of meat.

Garlic Mashed Potatoes Secret Recipe

It never would have occurred to me to use oregano and romano cheese in mashed potatoes, but we have ourselves a new mashed potato staple! I didn't use any of these proportions - I just made the same number of potatoes I normally do (4) and added the other ingredients to taste. I also added some milk.

Red Potato Chicken

It's not spectacular, but it's easy to make and it tastes fine. I also added carrots, celery and onion. And I also recommend at least partially cooking the potatoes first (I nuked mine instead of boiling them) so they're not still hard when the chicken is done.

Chicken Pot Pie VIII
