Italian Stuffed Chicken Breast

I really liked it, so did DH and DD. Just added more garlic and used Italian seasoning instead of oregano and basil....perfect!

Enchilada Casserole III

I made 2 changes-cooked the hamburger with fresh onion and garlic, and used Taco seasoning. I don't think this really changes the essence of the recipe, which is awesome! My hubby put sour cream and salsa on his, I ate mine the way it is. Either way, it's a hit.

High Temperature Eye-of-Round Roast

I made this for Christmas dinner yesterday, and it was awesome! I had a 5 lb. eye,rubbed it with Olive Oil and seasoned. I put it in for 35 minutes at 475, then turned down to 175 for about 2 1/2 hours. I was going to turn it all the way off, but decided I didn't want it cold, so I left it on for warmth. Took it out,covered with foil till I got done with dinner prep. I have never had one come out so good-when I started to slice it,the juices just ran. The one end was alittle more than medium, the other end was still pink, so it was perfect for the mix of tastes we had. So tender I couldn't believe it. Definitely will do this one again!!!

Round Steak and Gravy II

I used a boneless chuck steak, didn't have round. I sauteed onion and mushrooms, browned the meat, poured the onions and mushrooms over it, then mixed 1 can mushroom soup, 1 packet Lipton Onion soup mix, and 1 can of water. I also put a buillion cube in with the onions and mushrooms. I cooked it in the oven, instead of the crock pot, and I think it was alittle tough for that reason. Otherwise, it was awesome-gravy was just thick enough.

Slow-Cooker Pepper Steak

I used round steak, and cooked it on top of the stove. It was very good, I simmered it for almost 2 hours total, adding the green peppers and mushrooms (I love them in anything) during the last half hour. I also doubled the sauce, and there was alittle left over. Family loved it!
