Glazed Meatloaf II

I'm the type that makes meatloaf JUST to make meatloaf sandwiches. This recipe was perfect! I don't keep bread stocked, so I substituted 3/4 cup of oats (never having done this before but trusting other reviewers). The resulting meatloaf was dense, moist, and perfect for sandwiches. Definitely going to be a keeper. Thank you!

Banana Banana Bread

This recipe is excellent! I made 5 mini-loaves with the recipe set to 18 servings, and I will only modify next time by making a brown sugar/flour crumble topping before baking (the brown sugar sprinkling thing really didn't do anything here). I also added chopped walnuts, but who didn't? Thank you for my new go-to banana bread recipe. (for those that also bake mini loves -- 30 minutes.) :)

Blueberry Zucchini Bread

Great recipe! Added chopped walnuts (about a cup) and a crumble topping (basic, flour/brown sugar/butter). For anyone else wondering about the mini-loaf thing: it filled 6 of mine, which is the equivalent of 2 standard-sized loaves. I baked them for 43 minutes total and they turned out great. I'll also grease & flour my next pans (though they were non-stick). I just Pam'd these and removal was tricky -- blueberries, once baked, become sticky to get out of the pan. Wonderful gifts for neighbors for the holiday-tween times though. Thanks for the recipe!

Grandma Ople's Apple Pie

My husband, not a fan of pumpkin pie, loves this pie -- and I have to say, it doesn't make me miss pumpkin. You'll definitely want to invest in an apple peeler and corer (@ $16 at Amazon), but with that and a pre-made (frozen) pie crust, the prep was about 20 minutes for me. I also don't do the lattice on top, I made a crumb topping (half cup each of flour & brown sugar, stirred together, then cut in 3T of unsalted butter). The apples mound HUGE in the crust, so pouring the sauce requires a very slow approach, but everything should fit and not run over when done. The cooked sauce gives it a sweet caramel-y flavor, and heating it up a day later and adding whipped cream is definitely the way to go.

Salmon with Lemon and Dill

This is my go-to salmon recipe and a cinch to make on those evenings when you want dinner ready in a half hour. Pair it with brown rice and broccoli or peas, bread on the side, and it's a filling dish with super-easy prep and clean-up. Thanks to this, we eat fish at least once a week now! Oh -- forgot to mention that it's forgiving too -- I measure the butter & lemon juice, crush 5 garlic cloves instead of the garlic powder, and then just ballpark the dill weed, salt, and pepper. I also add sliced lemon on top to give it extra lemon flavor, and usually bake for 30 minutes instead of 25 (my fillets usually range up to 1.25 lbs). :)

Honey Cornbread

YUM! Most cornbread seems really dense to me, but this one was airy and light. Mild flavor that worked great as muffins (15 minutes at same temperature). Will definitely make again!

Atomic Canuck Chili

Amazing! Cooked as-is, though I wish I would have used fresh mushrooms as another reviewer suggested (canned is just a bit flaccid and slimy for my tastes). A good amount of kick with sweet/smoky undertones -- though I imagine a lot of this comes from the barbecue sauce you use and the sweetness of the baked beans. Carrots added an interesting texture that we didn't mind, and the celery wasn't nearly as noticeable as the carrots in the end. Paired it with a dollop of sour cream, cheese on top, and the honey cornbread recipe from this site. Looking forward to fighting for the leftovers!

Twice Baked Potatoes II

These were -amazing-. I cut down on the sour cream to equal about three generous spoonfuls, and I let the potatoes cool a bit before scooping out the insides. Used cheddar on top instead of American, and rolled them in salt after scrubbing them. Sooooo good -- creamy and crispy outsides -- husband and I were fighting over the leftovers! There was also leftover stuffing, so I tossed it in a ramekin, topped it with cheese, and cooked it along with the other potatoes. Great!
