Christmas Breakfast Sausage Casserole

I thought thiswas really good ... my family often doesn't like these because of the 'squishy' texture even after it is cooked. This one has less liquid than many so that doesn't seem to be a problem. I also used 6 (fairly thick) slices of day old Italian style bread, so maybe that helped too?? The only other change was to add 1 tsp savory as well as the mustard powder, but anything could be added to this versatile recipe! Thanks for posting

Oatmeal Carmelitas

These are very yummy, but with a name like carmelitas, I thought they would taste more like caramel and less like chocolate. Don't get me wrong, I love chocolate, but it wasn't what I was looking for in this recipe. After making this a few times, I have determined that my family likes it best if I reduce the butter to 2/3 cup, reduce the chocolate to 1/3 cup (about 2.5 oz) and omit the nuts. This cuts down on the greasiness and really lets that caramel flavor shine! A real keeper!

Creamy Chicken and Wild Rice Soup

This 5* rating is based on the addition of celery (1/2 cup), carrots and peas (1&1/2 cups each). Without veggies of some sort, to us, this soup was really more like chicken and rice in a LOT of gravy. With the veggies, it was heaven!

Jenn's Out Of This World Spaghetti and Meatballs

This rating is for the meatballs only. I used oatmeal instead of crumbs, but that is just preference. I can't believe how tender these come out when cooked in the sauce. Ingenious! Here's a tip I learned about meatballs... instead of rolling out each tedious one, try rolling a handfull of meat into a 1" thick rope and then cutting the rope into 1/2-1" lengths. Much faster!

Roast Sticky Chicken-Rotisserie Style

I was skeptical about roasting my chicken uncovered for the duration of it's cooking, but I have been converted! I didn't have the time to "marinate" overnight, just rubbed'er down and stuck'er in the oven! Beautiful!

White Cheese Chicken Lasagna

This was so yummy! My whole family loved it and it's really harty...will likely get 3 meals out of 1 pan! I made this mostly as stated, but after reading reviews of this being dry, bland and too cheesey/spinachy I made a couple small mods. (Bear with me, this is gonna be wordy, but it really seems to solve a lot of problems.) I used 2 cups milk, only 1 pkg of spinach and only about 2 cups of cheese. I also did the layering just a little differently. After making the white sauce I divided it in 1/2. To one half I added the chicken and 1 cup of cheese (old Cheddar to give it a little more zip) and I used the other half to coat my pan and for the final layer of noodles. To the ricotta I added the spinach, salt and 1/2 cup parm. The layering went like this: Sauce (without chicken), noodles, ricotta/spinach mixture, noodles, sauce (with chicken), noodles, sauce (without chicken), topped with parm and mozza. The end result was moist, rich, perfectly seasoned and sinfully delicious! Can't wait till tomorrow to get my hands on those leftovers!

Lemon Square Bars

So-o-o-o delish! I used the suggestion to cut the butter and sugar in the crust to 3/4 cup each, but other than that, made as stated and we were not disapointed! For all you lemon lovers out there, give this one a go!

Marmalade Turnovers

I hate to give such a low first review for any recipe, but this really isn't much better than a 3*. The dough was very yummy (similar to the dough for cream cheese tart shells on this site), but because of the consistency of jam, it was hard to get much of the jam inside the "pocket" without it oozing out. So as a result, these had a lot of crust and not much filling. Kinda disappointing, sorry.

Italian Grilled Cheese Sandwiches

I was looking for something a little different to dip in our soup and this little number fit the ticket. I will likely use more garlic and oregano next time, but still a delicious way to spice up your grilled cheese.

Butternut Squash Soup

This is a definite 5* recipe! So good and so simple. I also only used 1 pkg cream cheese and may use even less next time as it was still very rich. There were no leftovers! Thanks for a new way to use squash!

Fudgy Macaroon Bars

I think these bars are doomed to fail. I took the previous reviewers advice and cut the butter in 1/2 and the brownie part seemed ok, other than there wasn't near enough of it and it disappeared into the black hole of macaroon filling. I think the only way these would turn out like the photo would be to double or triple the brownie portion. If you decide to try these GOOD LUCK!!!!

Gelatin-Flavored Popcorn

This is a fun recipe! I reduced the margarine to 1/2 cup and took MTEDWARDS advice to just let the whole thing boil (keep stirring) for 4 min, then remove from heat and add 1/2 tsp soda. Much easier than messing with a candy thermometer. Oh ya, I also upped the popcorn to about 20 cups, so that it wasn't so sickenly sweet. Still lots of flavor and it turned out nice and crispy.

Pumpkin Cake III

So-o-o-o-o moist and melt-in-your-mouth-ish! I used 1 cup oil and 1/2 cup applesauce, I also used the spice combo from my fave pumpkin pie in this cake as the cinnamon didn't seem flavourfull enough; not a crumb left!

Baked Potato Salad I

As written, made with only mayo, I don't think I could have even given this a 2*, but I'm not a fan of warm mayo. Using 1/2 mayo, 1/2 sour cream was perfect for my family, even good as left overs! Thanks, this is a keeper!

Spool Sugar Cookies

I reduced the oil to 1/2 cup and found these to still be very oily. Overall a good cookie, but my regular rolled sugar cookie recipe is tastier, so to change it up, I think I'll use that recipe and press them with a spool. Sorry.

Crispy Gingersnaps

The cookies themselves were very yummy, but try as I might I could not get them crispy, which was a problem, since I wanted to grind them and use as a pie crust. I have no idea how anyone could have burned these.

Best Big, Fat, Chewy Chocolate Chip Cookie

Does this recipe really need another high rating? Hubby thought they were great - 5*. For me a little more salt (3/4 tsp) and a little less (dare I say it? 1 1/2 cups) chocolate, made these a 5*. Thanks!
