Healthy Banana Cookies

Reviewed: Jan. 23, 2011
I understand this is a banana cookie, but know the banana flavor seems to overpowers whatever you add to it; chocolate chips, fruit, or nuts. I like bananas, but I think next time I might just add 2 bananas instead.

Creamy Broccoli and Rice

Reviewed: Dec. 16, 2010
I used what I had on hand - cream of mushroom soup, white rice, and 1 C broccoli it ended up being much more rice than veggies; I think there is room to add more broccoli/cauliflower. it is on the bland side, but to me, that's what kids like. easy to make, so thumbs up!

Applesauce Oatmeal Cookies

Reviewed: Dec. 14, 2010
yummy cookie, especially warm. not a super sweet cookie. it reminds me of a muffin. I think it needs something more; maybe some chopped apple chunks?

Omelet Biscuit Cups

Reviewed: Dec. 6, 2009
these were ok for us. too much biscuit and not enough eggs. good idea though.

Roasted Butternut Squash and Garlic Lasagna

Reviewed: Nov. 2, 2009
it was definitely yummy, however, the no cook noodles were not soft enough. I will probably pre-cook them next time. good flavor and fairly simple to make.

Squash Stuffed Chicken Breasts

Reviewed: Nov. 1, 2009
the chicken had good flavor and my entire family enjoyed it, but it was far too much work to be worth it. if you try this, I would encourage thicker breasts and increase the baking time.

Blueberry Loaf Cake

Reviewed: Oct. 22, 2009
recipe came out great, even at higher elevation (9200 ft). for some reason, my most of my blueberries sunk to the bottom of the loaf. any suggestions?

Butternut Squash Fries

Reviewed: Oct. 10, 2009
these were great! I only gave it 4 starts because they were on the mushy side; couldn't pick them up and eat them like regular fries. I will try the suggestion of microwaving them and draining the extra liquid next time. adults & kids loved them; it was a hit!

Very Veggie Lasagna

Reviewed: Oct. 2, 2009
a pleasant surprise! I'm not a huge veggie fan, especially when they're all together like this. I didn't have yellow squash on hand, but it was a great combo as is. my kids ate it with no problems! thumbs up!

Banana Banana Bread

Reviewed: Oct. 2, 2009
very good. my family and guests ate it all in one evening! I gave it 4 stars because (at no fault of this recipe) I live at 9200 feet, and it was off a bit. I think things cook/bake a bit faster up here, so it was a little dry.

Sirloin Marinara

Reviewed: Sep. 22, 2009
this was quick, easy, and great for my leftovers. I had leftover sirloin from the bbq a couple days ago, so I didn't have to cook it quite as long. I also had regular marinara and just added a can of mushrooms. it all came together great!

Pork Chops with Delicious Gravy

Reviewed: Jan. 14, 2009
very easy to make. pork chops came out perfect. however, if you are sensitive to texture you probably will not like this. the gravy was a bit thick and on the slimy side. if you can get past that, it tastes good.

Whipped Butternut Squash

Reviewed: Nov. 18, 2008
delicious taste! I gave this 4 stars because the technique was awful. to fill & cover with water, is A LOT of water which made it heavy and difficult to get in and out of the oven. also, scraping the squash out of the skin was a bit of a task. 1 hour was too long; the skin was too soft to even spoon it out. there must be an easier method.

Chocolate Chip Pumpkin Cookies

Reviewed: Nov. 18, 2008
this is one of a few cookies recipes I've discovered where the cookie is still soft the next day. very delicious! I didn't want to make 84 servings, so I just cut it in 1/2 ... although I still added 1C. of chocolate chips. they came out perfect!

Coconut Layer Cake

Reviewed: Apr. 14, 2008
I'm not a huge coconut fan; I made this for the cute factor! It turned out pretty cake-y, but my guests ate it up anyway. They all said a glass of milk was a must to go along with it. I gave it 4 stars because it is SO cute for the Easter holiday or any spring time occasion and it is creative yet simple to make.

Easy Apple Cider

Reviewed: Mar. 19, 2008
I make it every winter to warm up. It's super easy and everyone LOVES it!! A tad on the sweet side, so I use 1/4C instead of 1/3C of brown sugar - which makes it perfect. Enjoy!

Sugar-Free Frosting

Reviewed: Jul. 28, 2007
yummy and very easy to make! I used this for cupcakes and it worked great. I give it 4 stars because I can see it wouldn't work as well a cake; it's not quite thick enough.
