Creamy White Chili

It was good even though I left out the best parts - chicken, heavy cream and sour cream. (We try to eat vegan at home.) I did add nutritional yeast and a little flour instead. We will make it again!! Thank you!

Black Beans with Bacon

I made it pretty much the way Review Mama Cass made it - Thanks, Ms Cass for your suggestions. I put in extra carrots, celery, cilantro, and a can of mexican rotel. Fast and easy on the stove. Served it with brown rice - great main course.

Zucchini Hummus

Yum - great with pinto beans also great with white beans! When I made it with pinto beans it looked more like authentic hummus... This recipe is in my hummus/bean dip rotation. We eat hummus a lot - like adult peanut butter. Thank you for posting, Chef!

Banana Banana Bread

My only banana bread recipe now. Great with chopped walnuts. Hint - I mash and measure the bananas that I want to use - and then adjust the recipe servings up or down to match the bananas I have. Tricky - Huh!

Curried Spinach Soup

IGNORE THE PICTURE! I didn't read the other views carefully and didn't realize the soup would look nothing like photo. I also didn't read the recipe before making it... oops. So when I was getting out the spinach out, I spotted some asparagus and thought I would throw some in with the green onions. I suppose I made curried spinach ASPARAGUS soup. I liked it - I would do it again! I used a meatless "chicken" soup base, omitted lemon juice and used nonfat greek yogurt. I didn't add all the spinach - it was quite thick and rich without all of it. I have an immersion blender on order from Amazon, so I pureed it in my food processor. I think it would sell well to most adult family members and at church potlucks - which tend to be vegetarian. Go ahead try it - just don't imagine the photo. Think GREEN - VERY GREEN.

Peanut Butter Chili

It was good. As another reviewer said, I always have to play with a recipe. I added 1/2 an onion, two cans of tomatoes, some tomato paste and much more chili powder. We only have chunky peanut butter at the moment so I used that. I liked the chunks! Good with sour cream and cheddar cheese. I had mine on spaghetti and DH had his on brown rice. I'll make this again. Cheap and easy - can't beat that! Plan to serve it at a church potluck.
