About this Cook
I am 68, living in a retirement home, and happy as a clam at high tide! I live with my kitty Josie, and I work at a nursing/assisted living home as the "Suites cook". I prepare brunches 3 days a week, as well as special dinners an a occasional bake sale. I used to live at the place I work, and while I was getting well, baked cookies as often as I could. When I left, they created a job for me as their cook, and get payed for doing what I love. Go Figure!!!!!!! Enjoy sharing and reading recipes.
My favorite things to cook
Cookies, cakes, baked chicken with different seasonings, breads, and fried fish, and shell fish. Like to bake things that are basic, but that I can play with. Adjusting ingredients, spices, etc. However, I do best when I follow recipes.
My favorite family cooking traditions
Lefse, Swedish hot sauce, creamed cod with new potatoes, lots of cookies and goodies. Most of the above do not have recipes as they were handed down. Just think "Swedish"!!
My cooking triumphs
Feeding three kids and having them grow up healthy and happy.
My cooking tragedies
Too numerous to mention. However, I'm sure I can relate to alot of mentioned ones.

Cheesy Amish Breakfast Casserole
O.K. had my doubts, but served this, this morning to 15 Methodist gentlemen, and when I went to clean up after their meeting, couldn't find a scrap of leftovers! I would call that a 5 star recipe! By the way, other than doubling the ingredients, I used it just as written. Thank you.

Belgian Molasses Bread
Loved your bread! Halved the recipe, and made the dough in my bread machine, then formed it and baked it as usual. I normally make my dough in the machine, but don't like the way it looks after it's cooked, but love having the machine do all the kneading!!

Josephine's No-Bake Granola Bars
Hi, Rachelle, you could omit the peanut butter, but this recipe needs a "binder", something to hold it together, and the flavor would be altered. Play with it, and send back any results. Read your review Kristin, and your right, the pic. does not match the recipe, however, there are other pics. there, and one of them is mine. Please check it out.
