Slow Cooker Enchiladas

Have made this twice - the first time, exactly per the recipe, and most recently with the following slight changes. Used 1-1/2 lb ground turkey, cooked that with the taco seasoning, water and added a can of refried beans. Used 3 layers of 6 untorn tortillas, which in my 6 qt slow cooker amounted to doubling each of the 3 layers, with a single layer of another 5 on top. Cooked on high for an hour, and served over shredded romaine with sour cream on top. Fabulous!

Salsa Chicken Rice Casserole

I make this at least once a week - it's my "go to" when making meals for friends, as well. I dice and throw the onions in with the rice while it cooks, and combine the soups and salsa with the rice/onion mixture before layering - rice mixture, diced cooked chicken, cheese, layered twice as the recipe calls for. I serve with black or refried beans, tortillas and salad. Fantastic, easy and always a favorite!

Classic Macaroni Salad

My daughter, who thought she didn't like macaroni salad, tasted the dressing before I added the macaroni and said it tasted "just like honey mustard, only better" :) And I thought the dressing was exactly what I wouldn't like - I grew up on plain mayonnaise macaroni salad. My family doesn't like peppers or pimentos, and I didn't have celery, so mine was simple with just carrots but it was DELICIOUS! We ate it all in one sitting but next time I'll make sure it sits overnight - I can tell the flavors would have been even better if we'd waited. I'll make this a LOT this summer!

Seasoned Turkey Burgers

Delicious!! I was actually looking for a turkey meatloaf recipe - these are SO much better, since they're individual servings, and no bun needed! My husband and daughter are die-hard beef burger fans, and couldn't imagine a patty - let alone a TURKEY patty - being edible - let alone TASTY - all by itself. This surpassed everyone's expectations, including my own - I had mine in a salad. Yum... I'd read the reviews and was leery of it being too salty, so used low-sodium soy. Cooked on stove top, about 5-6 minutes per side. I'll be making these often!

Laura's Quick Slow Cooker Turkey Chili

I served this for a football party yesterday to a tough audience of chili experts, beef lovers and cooks - it was a hit with everyone. My mother even asked for the recipe! Like others, I added a can of drained corn instead of the 2nd can of kidney beans, and a can of diced tomatoes with green chiles instead of the 2nd can of soup. I also added some water halfway through cooking. Perfect spices, great blend of flavors. Delicious!!
