Chocolate Syrup

This is exactly what I was looking for! I used the ingredients listed, but followed the cooking instructions for another "chocolate sauce" recipe from this site: bring to boil over medium heat and boil for 1 minute. After being refrigerated, the consistency was about what I wanted. Kind of like what Hershey's syrup used to be before they started using so much corn syrup. I used Penzey's natural cocoa.

Blueberry-Topped Custard

I love the lemon-blueberry flavor, but don't love the floury taste in the custard. I would like it better with some kind of crust.

Turkey Rice Casserole

This casserole went over very well with my family. I didn't have quite enough gruyere, so i added a little parmesan to the sauce. I like more wild rice, so I doubled the amount.

Mexican Casserole

This is a pretty good casserole. It was kind of hard to tell how much water to add, I didn't want it soupy. In the process, I don't think I added enough because the chicken was too dry. I think I would play around with the seasonings next time, or just use leftover chicken already cooked. I like the idea of this casserole and I think it would lend very well to many different substitutions for flavor variations.

Berry Yogurt Crunch

I have made this with vanilla pudding and have tried both the grape-nuts or granola. The last time I made it I used cheesecake pudding, greek yogurt thinned with skim milk (because that's the only plain yogurt I had) and added the lemon juice to the pudding mixture along with some lemon zest. I did not macerate the berries. I think I liked this way the best!

Almond Wild Rice

The brown and wild rice can be cooked together, and I'm not sure it needs all the butter. Next time I will put in less butter with the rice and use more to brown the almonds, I love the browned butter/almond flavor. I did not use the raisins because I was serving it with fish. The fish was baked with chopped tomato, onion, cilantro, and lime juice. The rice was fabulous mixed with the fish dish.

Spinach and Strawberry Daiquiri Salad

The dressing and strawberries reminded me of a strawberry limeade, very refreshing for summer! I don't like honey, but it blended nicely in the dressing. I only toasted the almonds, I don't think they needed the extra sugar. The salad was also good without the coconut and onion. I added some cotija cheese for a little saltiness, I think feta would be good too.

Simple Whole Wheat Bread

I thought this recipe made a great sweet and soft loaf of bread! I made two round loaves and one traditional. I thought the texture of the round loaf was a bit better, maybe softer and more consistent? The dough was very easy to work with. I needed about slightly less than 3 c. of the whole wheat. I used my KitchenAid mixer to knead the dough. I used gold medal bread flour for the white flour and a stone ground whole wheat. I added a bit of ground flax seed. This recipe is almost identical to the recipe on the back of the wheat flour I have, but this one has twice the amount of honey, which I like very much.

Oatmeal Pancakes II

Great pancakes! I love most any pancake with buttermilk and this one really works! If you don't have fresh buttermilk, you should really try it. Makes a difference! I wanted to use up some packets of apple cinnamon oatmeal that my kids didn't like, so I doubled the recipe and used three packets. We like sweeter pancakes, so these were perfect. I also substituted butter instead of oil, but next time will try the oil. I didn't add salt because I am sure there is some in the packets I used. I didn't let the batter rest like I usually do, but the texture was still good. They were soft and cakelike. I'm not sure if the texture would be different with plain oatmeal, but I will try it sometime. I used the blender to mix.

Creamy Shrimp Linguine

This was awesome!! I had to increase the amount for our family, so I doubled the shrimp but only used 1-1/2 of the amount of the sauce. I used raw shrimp and freshly shredded cheese to avoid clumping. I substituted grapeseed oil for part of the butter and reduced the amount. I slightly increased the garlic because I love it and also added parsley for personal taste. I used angel hair pasta and topped with fresh ground pepper. I will definitely make this recipe again!

Pumpkin Pecan Pancakes

I was disappointed with these pancakes. They were too thick, hard to turn and weren't as flavorful as I expected. The only substitution I had to make was using oatmeal for the multigrain hot cereal. It seems like it should have some type of oil. I would rate this two stars for being edible but will not make again. Maybe the oatmeal affected the texture, so I ranked this three stars.

Twice Baked Sweet Potatoes with Ricotta Cheese

I had to change it a bit for my taste. The recipe stated to use the skins so that was my first change. I must have overbaked the potatoes because I could not use the skins so I put it in a casserole. Using a blender would have made it too smooth for my taste, I saved a couple of dishes and a few minutes time by just mashing the potatoes by hand. I despise sage so I did not use it. Based on the other reviews, and after having made it without sage, I'm sure that amount of sage would overwhelm the potatoes. I also left out the ginger and brown sugar as I wanted this to be quite different than the typical sweet, almost dessert-like sweet potato casseroles. The slightly caramelized shallots and cheeses added a great flavor on their own. With just those ingredients plus salt and pepper, I thought it was 5+ stars!! I can't wait to take this dish to share at a get-together.

Vegetable Whip

I liked the proportions of turnip, carrot, and potato. Boiled onions didn't appeal to me so I just boiled the vegetables without the onion, mashed them with the butter and milk, then added caramelized shallots instead of onion. I didn't need as much milk as it called for, I may have overcooked the potatoes. I will definitely be making this again!

Italian Dressing Mix

Like most reviewers, I used garlic powder in place of garlic salt and only 1 T. of added salt. It was great on a sub sandwich. The dry mix also works well for seasoning meat. Very versatile and easy to change a bit for personal taste.

Multi-Grain Pancakes

These pancakes were nice and fluffy! I usually leave pancake batter rest a bit which I think helps. I only had whole wheat pastry flour, but that seemed to work well. I only had a half cup of plain yogurt so I used vanilla yogurt for the remaining cup. For a bit more flavor, I added a couple tablespoons of sugar and used butter instead of oil. Because of the added sugar and vanilla flavor from the yogurt I did not use any syrup, I though they were great plain!

Kristin's Fudgy Brownies

I made the recipe as written. The baking time given would have been too long in my oven; I took them out at about 30 minutes. I was hoping this recipe would be an enhanced version of the original Hershey syrup recipe, but it wasn't. It was lacking in flavor and the texture was less than appealing for me.
