Sopapilla Cheesecake Dessert

Made this to bring to a friends house for dinner; we wanted something different. This was a great dish and loved by all! I read over a lot of reviews and made a few changes. I used 1/2c brown sugar splenda and 1/2c white sugar in the cheesecake mixture, which cut out 1/2c sugar. I only used about half of the butter recommended, I just covered the pastry layer with melted butter until it was covered and discarded the rest. Drizzled honey on top as many suggested - it was plenty sweet and very very good! I think a little extra vanilla extract would be nice next time. We topped it with apple pie filling and cool whip - devine! I used the Pillsbury pastry sheets instead of crescent rolls - this makes it very easy!

Fruit Salsa and Cinnamon Chips

Made this for a "dessert day" at work, for those who wanted something low fat. It is a hit! Lots of chopping, but it's worth it. I used crisp apples, raspberries, strawberries and kiwi. Don't skip the kiwi! It gives it that bit of tartness you need in salsa and goes great with the cinnamon chips (which I bought bagged from the grocery store).

Sandy's Chocolate Cake

Made this today for my husband's birthday (the world's biggest chocolate cake connoiseur)...and my mom showed up, the second biggest...this one is right up there! Thanks to all the comments here, I wasn't surrised at the watery batter...and I put extra shortening on the pans so it wouldn't stick. The frosting is fantastic and the cake was extra moist. It was chocolatey enough! Make sure to have a big gallon of milk on hand! Thank you Sandy...it's an award winner in my family!

Three Cheese Chicken Bake

We enjoyed this, it is a heavy dish though and although we all like cheese, it seemed to be a little too much cheese. The cheddar and parmagiana came through strongly. I will make this again but might leave out the parm altogether. It was very good for a big appetite and you need nothing with it other than a salad.

Chicken Florentine Casserole

Garlic Chicken Fried Chicken
