Healthier Stuffed Peppers

I only used 3 peppers and halved them to make 6. I added 1 tbsp chili powder, because I thought it would be too bland as written. It was very good.

Twice-Baked Mashed Potatoes

I had some left-over mashed potatoes to use up, so I thought I would try this recipe. I didn't have any green pepper on hand, just a couple of green onions, that I chopped up. I didn't saute them I just added them to the potatoes along with some cheddar cheese, salt and pepper. I put the potato mixture in two small ramekins and baked for about 25 min. I then added some reserved cheese, green onion and some bacon bits on top. So tasty!

Roasted Brussels Sprouts

This is such a simple recipe, but the brussel sprouts were amazing! We loved it. They almost melt in your mouth. You would think they might have a burnt flavour to them, being so dark, but they don't and they were not bitter at all. This is how we will be cooking them from now on. So yummy!

Creamy Rice Pudding

I followed the directions, except did not add raisins. It should definately be served warm. After sitting for about 4 hours it dried out and I had to add more milk to make it creamy. It could have used more sugar as well.

Slow Cooker Teriyaki Pork Tenderloin

This recipe turned out pretty good.I did not brown the tenderloins, I just put them in slow cooker and covered them with the sauce. I didn't add the red chile pepper, since I didn't have any on hand. The sauce had a really nice flavour, but I added a little cornstarch at the end to thicken it up. The pork was a little bit dry. Next time I think I will cook it on low.

Caramel Bread Pudding

This was very good, however I made a few changes after reading some of the reviews. I let the brown sugar dissolve in the hot water before pouring it over the bread, I doubled the amount of bread and cinnamon and added an extra cup of milk. To prevent the eggs from scrambling, I gradually added the hot milk to the egg mixture, while using a whisk. I used a 9X13 pan and baked it for 45 minutes. With changes the bread pudding turned out great - not too sweet and not too soggy.

Fudgy Chocolate Cream Pie

Jack-O-Lantern Pumpkin Pancakes

I thought these were O.K., but my husband didn't really care for them. I followed the recipe exactly, but I did let the batter sit for 15 minutes, as suggested by another reviewer and I had no problem with the cooking time. I found the cloves to be a little over powering - I really couldn't taste the pumpkin at all. If I make these again I will omit the cloves entirely and maybe add more cinnamon. These are a very hearty and thick pancake and very filling.

Pumpkin Spice Cupcakes

These cupcakes were so good! I did change a few things though, after reading some reviews. I replaced the butter with oil, and I doubled the pumpkin and cinnamon. I baked them at 350 degrees for 20 min. They were so moist and tasty and the cinnamon cream cheese frosting topped it off nicely. Thanks for the recipe.

Brown Sugar Oatmeal Pancakes

These are nice and hearty pancakes. I didn't have buttermilk, so I used 1 Tbsp vinegar and added milk to equal 1 cup. Very quick and easy to prepare, and very tasty. They also freeze very well. Just let them sit out for about a half an hour and put in the toaster. Great with butter flavoured syrup.

Cinnamon Rolls III

These are so good! I used my Kichen Aid mixer to knead the dough since i don't have a bread machine. I let the dough rise for about an hour, made the rolls and let it rise for another 45 minutes. I used all purpose flour because that's what I had, and I didn't add pecans becuse my husband doesn't like nuts - other than that I followed the recipe and they turned out perfect. The icing was just right for us - not too sweet. I can't wait to make these again. Thanks for a great recipe.

Chicken Cacciatore Skillet

My husband and I really enjoyed this. I don't like mushrooms, so I left them out and I used brown rice because that's what I had on hand, otherwise I followed the recipe as written. It was quick and easy to prepare and quite tasty.

Slow Cooker Swiss Steak

This was very good and so easy. I didn't bother to brown the veggies or meat, I just put everything in the crock pot, so I did not use the oil or flour. I sliced the carrots instead of shredding them and I used a mixture of cornstarch and water to thicken the sauce. I cooked this for about 5 - 51/2 hours on high. This was very tasty and the meat was tender. Next time I will use some chopped green pepper for added flavour. I will definitely be making this again.

Stuffed Pepper Soup IV

What a great recipe. I did make a few changes though - I used ground beef instead of sirloin, red and green peppers, 2 10 oz cans of beef broth instead of the chicken, and 1/2 tsp oregano and 1/2 tsp basil instead of the sage. It was so good. Will definitely make this again.

This recipe is very good. I made half the recipe, but still used 1 pound of ground beef. I layered it as stated in the recipe but topped it with a little extra mozzarella cheese. I will be making this again.

Creamy Au Gratin Potatoes

I was looking for something other than plain scalloped pototes to go with the ham I was making. I decided to try this recipe and I am happy that I did. It was very good and the sauce was nice and creamy, however, I did chop the onions because I didn't think I would like big pieces of onion in it. I also added bread crumbs to the top. I will make this again.

Crispy Mashed Potato Pancake

This is a great way to use up those leftover mashed potatoes. It is a great basic recipe because you can add your favorite ingredients to suit your own tastes. I added some chopped onions, salt and pepper; and 1 Tbsp flour as suggested by another reviewer. I left out the Italian seasoning and garlic powder. I have also added some cheddar cheese to them and they are very good. I will be making these again. Thanks for the recipe.
