Twice-Baked Mashed Potatoes
I had some left-over mashed potatoes to use up, so I thought I would try this recipe. I didn't have any green pepper on hand, just a couple of green onions, that I chopped up. I didn't saute them I just added them to the potatoes along with some cheddar cheese, salt and pepper. I put the potato mixture in two small ramekins and baked for about 25 min. I then added some reserved cheese, green onion and some bacon bits on top. So tasty!

Roasted Brussels Sprouts
This is such a simple recipe, but the brussel sprouts were amazing! We loved it. They almost melt in your mouth. You would think they might have a burnt flavour to them, being so dark, but they don't and they were not bitter at all. This is how we will be cooking them from now on. So yummy!

Creamy Rice Pudding
I followed the directions, except did not add raisins. It should definately be served warm. After sitting for about 4 hours it dried out and I had to add more milk to make it creamy. It could have used more sugar as well.
