Baked Beans, Texas Ranger

If you like spicy baked beans these are the ones for you. These were a big hit at the family cookout. I did double the beans used and I cooked them a bit longer so they were less soupy. Oh, and I used bacon instead of sausage. Will be taking these to the family reunion.

Fruit Salad in Seconds

So easy, and a big hit with the family. Even my meat and potatoes husband went back for seconds. I'm not a big yogurt fan but when mixed with the cool-whip it was a winner.

Waldorf Tuna Salad

I make this on Sunday and it is lunch for four days. I don't use the bread or cheese. Just put on top of salad greens. I don't like yogurt so I used cottage cheese instead which works better than you would think. I'm a bit generous with the celery also. Great healthy lunch.

Spinach Bars

The bars that made me famous!! Well almost. Everyone loves these bars. I take these to any gathering and come home with an empty tray. Sometimes I make a double batch and leave some at home. They are great from breakfast. I make mine in a slightly smaller pan so they are a bit thicker and cook them a bit longer too.

Chicken Stew with Dumplings

Very Good. Even my husband liked it!! He did say he didn't think potatoes belonged in Chicken and Dumplings but he ate two servings. The dumplings were the best and not hard to make at all. Changes - Well I left out the peas because I knew he wouldn't like them. I used boneless thighs and breast meat. I used baby carrots which reduced the prep time. I added extra of the spices, and added bouillon cubes to the water. I also cooked the celery and onion from the beginning with the chicken. Next time I'll thicken the broth a bit at the end. Really a good recipe. I'm sending it to my daughter. :)

Simply Traditional Lasagna

Would be a great Lasagna but mine came out way to salty. It was my first time to use the no cook noodles, could that have been the problem? I think I will try it with regular noodles next time.

Roasted Garlic Bread

Great Recipe but for those of us that are still working on boiling water or are always short on time... They sell roasted garlic in jars. This cuts the prep time down to almost nothing.

Banana Pudding IV

Simply the best banana pudding possable*** Easy too, for us who are cooking impared. I used organic Bananas as they were the most ripe at the store. If you haven't tried them do. They have much more flavor that the others.
