Ultimate Twice Baked Potatoes

These are so easy to make and even better--make a bunch, individually wrap in plastic wrap & these will keep in the freezer for months--that way I just need to pop out how many I need for dinner and heat up. Delightful dish!

Southwestern Vegetarian Pasta

I've made this twice and put one away in the freezer to see if it froze well. Taste is good, doesn't feel like a vegetarian meal, and the frozen casserole tasted just as good as the fresh.

Lime Cilantro Rice

This is okay, but the cilantro & lime are both mostly lost in the rice. I can't say that I need to make this again (and I've tried it 2 times just to make sure)

Meatball Sub Casserole

I seriously wanted this to be as great as it sounded, but I thought, "hmm bread under sauce for 20+ minutes sound gloopey". I should have listened to my inner voice. My spaghetti sauce was delish, my homemade meatballs were delish--I should have served them BESIDE some garlic bread. I would cook & cut my garlic bread into bigger squares and serve them under the meatballs & sauce just no extra cooking step.

Penne with Shrimp

I just made this for my family and it is absolutely delicious! I followed fellow reviewers' suggestions and upped the garlic to 2 tablespoons. I also added dried basil and crushed red pepper when the garlic/onions were cooking. Finally, instead of crushed tomatoes, I used a 28 oz can of whole San Marzano tomatoes--they make this dish amazing! Sauce was not too thin, sauce was not bland; sauce and dishe were super!

Authentic Louisiana Red Beans and Rice

I've never had authentic red beans & rice--so if you want an expert opinion about that--find another review. BUT I am a pretty awesome cook (according to my 3 kids & husband anyway!) and this was a great dinner for us. The directions are easy to follow, the ingredients are accessible (meaning I didn't have to fly to Tibet for a 1/2 tsp. of anything--relatively speaking), and the taste was super. My only semi-negative comment is directed towards myself because the only andouille I could find was "meh" which meant the flavor IT imparted was also average. SO make sure you go to a real butcher and ask for their andouille & don't use middle-America-glorified-hot-dog andouille! The extra effort will be worth it.

Rachel's Tomato Basil Soup

Pretty good basic soup. And if I was looking for something tastier than canned soup, this is it. If I'm looking for a gourmet experience--this obviously isn't it. But last night's dinner of this soup & grilled cheese was delicious. So much so, we're having the same again tonight--except w/ the leftover soup.

Beer Batter Fish Made Great

There was nothing wrong with this recipe at all. Flavors were great, preparation was as I expected (I was hand battering fish for goodness sake, I knew it wasn't going to be box mac & cheese easy~) My only "complaint" is that I felt guilty eating this! I could just feel fat clogging my arteries & weighing me down! So, I will make these again, when I'm looking for a special treat, but I can't make these too often at all!

Swiss Steak Quick and Easy

This was a pretty delicious dinner. I only used 1 can of diced tomatoes (my family members are not huge tomato fans at all) and then supplemented w/ filling the now-empty can (from the tomatoes) with tomato juice & then rinsing the can w/ about 1/3 full of water & added that to the mix. Everyone loved this dinner. I'm also saving it for my niece who is newly married & on the lookout for recipes to fill out her bag of tricks with.

Western Salad

This is an interesting & delicious salad option! Our HyVee had the beans so the recipe was extremely easy to pull together. I made this 2 different times & preferred the salad with Spicy Doritos--added a nice touch. This salad will be my secret weapon for potlucks from now on--especially since I hate it when there are 4 of the same kinds of dishes. Try this salad, it's worth the effort!

Ranch Dressing II

I've made this recipe many times & have (I think) perfected it. When I made it the 1st time, it was way too thick & way too dill-y. Next time I added the milk/buttermilk as suggested by reviewers, too runny. The last time I made it I added equal amounts of mayo/sour cream. Left the dill as is & doubled all the other seasonings & then added buttermilk at the end to my desired thickness. Perfection!

Maritime Blueberry Buckle

Delicious way to use up some leftover fresh blueberries--really easy to make & a great taste. I love mine served warm with a little half/half but my daughers prefer vanilla ice cream.
