Pineapple Bars

These ROCK!! The only changes I made to the ingredients were to add 1 TBL. lemon juice to the filling, and 1 TBL. vanilla to the crust/topping. I have NO idea how this is supposed to fit in to a 13 by 9; I sure didn't have enough stuff, so I stuck it in an 8 by 8 pan and they came out SO yummy! I will ABSOLUTELY make these again.

Peanut Butter Brownies I

Wonderful! I was out of peanuts so I used crunchy peanut butter- as I like peanut butter and chocolate and had a trough (I bought a lot when they wernt on sale after X-mas) of Hershey's Kisses, I threw a bunch of those in as well and they were gobbled up! This second time I made them I added the kisses again, used smooth peanut butter, and tossed in a small bag of chopped pecans. They're in the oven now!

Ground Beef Stroganoff

My husband thought this was quite tasty. We did make a few changes- I opted for 1 package of fresh mushrooms rather than canned, I also added black perrper and salt. Also I used minced garlic rather than garlic powder. On my end, I do think it needed a lil something.. maybe very thin strips of green bell pepper and a shot of red wine? I will be tweaking it further next time I make it.

Soft Sugar Cookies IV

These were definately soft but I didn't find them too chewy. They aren't too sweet so for hot tea drinkers I imagine they are the perfect cookie! (Maybe they'd be good with cocoa too) I added a lil colored sugar to the sugar I rolled them in since it's the holidays and they look lovely. All I did different was add extra vanilla.

Oatmeal Sugar Cookies

These are wonderful! I had to use the link to scale the recipe in half because I found to my dismay that I was severly low on flour, but since there's only 2 of us it's not a bad thing.. I still wound up with 16 cookies! I changed nothing except the vanilla- I left that amount the same as in the regular size recipe because I love vanilla. I hate hard-like-cement cookies and these are so far from it. YAY! Thanks for sharing!

Apple Crisp with Cranberry Sauce

This was such a good idea! It doesn't take many ingredients and is so simple. The vanilla ice cream on top is a yummy must. I omitted the cinnamon, but only because I am allergic to it and it was still lovely and my husband was much impressed. (It's hard to get him to eat deserts that aren't chocolate or pudding) Will make again.. I did make one cgange.. I added some vanilla in with the apples, but I really love my vanilla.

Slow-Cooker Chicken Tortilla Soup

It was super! Looking over the reviews, I added both the black beans and the dollop of sour cream.. and I used my already cooked n shredded leftover turkey in lpace of the chicken- What a great way to eat leftover turkey! My dubious husband was into it quickly and for a guy that doesn't think soup is filling, he was patting his stomach quickly quickly after stuffing himself! I WILL make this again!

Mary's Sugar Cookies

I made these this morning and I got 2 dozen plus 4 cookies from it. Granted the size of the cutters and the thickness you roll it out to will make the count vary. I had no almond extract so I used extra vanilla (Which I love anyway) but I did find that I needed to add more liquid to turn it in to any kind of dough. I had no milk so I added about 3 or so Tablespoons of apple cider and presto! Cookie dough! I did NOT chill it as it was just right to handle right then. They baked up well in a 35o' oven. Without frosting, they have a nice flavor to go along with a hot cup of tea, but I am a frosting freak so I will frost the rest. Not bad.

Cornbread Stuffing Southern Style

I hadn't made the stuffing for Turkey Day because it was my husband's grandmother always did it. Well as they canceled Thanksgiving this year, I got to cook and I chose this recipe for my stuffing, revising it to some of the sugestions in reviews I'd read. It's WONDERFUL! I used sour cream in place of the yogurt simply because I already had sour cream in the house. I also used only 1/8 a tsp. of cayenne, and 1/8 tsp. sage. When I picked up the corbn muffin mix I got 2 different kinds, one white and one honey golden, just for giggles. My husband LOVES it (and he never ate much stuffing before)- I love it too except I think there is a lil too much oregano, so I will probably halve that next time I make it, but I WILL be making it again.. .it is now "THE" stuffing recipe for us.. in-laws or no!
