Lemon Chicken

I made this for my family tonight. It was good but the rice was a little soggy. I might cook the rice on its own next time and then mix together with the chicken/veggie mix.

Slow-Cooker Chicken Tortilla Soup

This was good. I added 1 cup brown rice and left out the corn. It definetly was not runny like other users had said, I think the rice changed the texture. I also added sour cream and avocado at the end to each bowl. I doubled the recipe because I was feeding 4 growing boys. We only had 1 serving left over.

Spinach-Stuffed Salmon Fillets

What a great recipe. I did not stuff because my salmon was to thin. I cooked the salmon and then added the mixture to the top and put back in the oven to warm it all together. I added mushrooms, about triple the pesto, double the Sun dried tomato's and added a healthy serving of garlic. Even my son who "hates" salmon ate it with no complaints.

Herbed Orange Roughy

Very tasty, the directions were a little confusing because I think they repeat however I put the fish in the skilet, put the ingred. over the top, brought to a boil and then little it simmer for about 8 min. I didnt have any paprika, so we did without. I also didnt expect to have so much liquid left over at the end, we just poured a little over the fish and threw the rest out. Very light yet tasty dish.

Spicy Garlic Salmon

This was good. I did not pre-heat the oven and put the fish in for 25 min, it was a bit to long, leaving the fish dry. I will make again but start checking around 18-20 min.

Harvest Pork Stew

My entire family, iincluding my in-laws loved this. I made due with what I had. I pre-heated the pork as suggested, added the broth, onion, rosemary, sage, 2 cubed apples, baby carrots, red pepper, garlic, mushroom and green peppers. Threw it all in the slow cooker and left it for 4 hours. I ended up having to added a little flour and a can of mushroom soup at the end to thicken it a little but it was delicious.

Ginger Salmon

This was good. I added a little viniger as well as the olive oil to give it a little extra zing. I would add that in the future for sure. I also didnt have enough glaze, I added to both sides of fish so I made a little more and really coated the fish. Entire family liked.

Tex-Mex Pork

This was very good. I cooked in my slow cooker. I had it on 4 hours, it was cooked. I turned down the heat, added an extra can of tomato sauce and BBQ sauce, left on low the rest of the day. Served on onion hamburger buns. Everyone loved it.

Mimi's Slumgullion

I got a little creative. I added red, green, and yellow peppers, asparagus, mushrooms and of course garlic. I added all of the veggies in the w/ onions. Other than that I followed directions and ingredients. Was very good! Would make a great breakfast dish with a tortilla, maybe even as a buritto.

It was okay, my chicken was a lot bigger then called for so it took a really long time to cook and was in the end dry. I would try the rub again, just not on a whole chicken.

Enchilada Casserole III

As others I skipped the first 3, used enchilada sauce. I added a can of diced tomatoes to the meat mixture as well as cilantro and a small can of diced peppers. When I removed the foil for the last 5 min of baking I added black olives and green onions both sliced. Was fantastic!!

Four Cheese Macaroni

Very good, Very rich! I 2x for a big family and we have enough for 3 meals. I feed 4 growing boys, and they eat a lot. I left out the egg, and did what others suggested in adding all chesse together over heat and making it a cream. We also added a smoked sausage. All my boys loved it.

Avocado Soup with Chicken and Lime

I got creative, I added cheese to the tortilla chips and then baked them. I also cut up litte squares of montery jack at the end and add them to the hot soup right before serving. I also used red onion, a little extra lime. I made for 6 it suggested 1 1/12 avocado? I used 3. Entire family loved it.

Linguini with White Clam Sauce

Made for the in-laws. Was good, needed a little extra zing but still a big hit. I added an extra can of whole baby clams, used extra garlic, added mushrooms, used 1/2 & 1/2 instead of milk, topped with parsley and parm chesse.
