Mother's Ham Casserole

Wow so simple yet so good. I had brown sugar ham leftover from Easter and I wasn't sure how it would blend with the other flavors. Let me just say there wasn't a crumb left in the dish. I used dried bread crumbs on the top. Nice and crunchy in the corners just how I love it. Thanks!

Chicken Piccata II

Even after following suggestions from other reviewers I just didn't love this recipe. Maybe it has to do with not liking lemon flavoring all that much. Chicken did indeed come out quite tender. Thanks anyways for the recipe.

Kielbasa with Peppers and Potatoes

I read many reviews before I make a recipe. Usually I stick to the recipe to see what it was meant to taste like unless many reviewers suggest 1 or 2 changes. This was pretty good however I added a few changes of my own. In addition to the pepper, I had green I added a small onion, a few baby carrots and one stalk of celery. I was trying to use up some left over vegetables. I cut everything the same size, all diced. I cooked all the veggies together in just a dash of oil. In a bigger frying pan I cooked the potatoes in a little bit of oil and butter to crisp them up a bit then I added the kielbasa. When the potatoes were almost tender I added the lightly sauteed veggies to the pan. I also added a little bit of beef broth to keep it moist and a few dashes of soy sauce. Put the lid on it and let it cook just a tad more to fully cook the potatoes. The only downfall is there just wasn't enough for 3 hungry adults and 1 child. Next time I will make even more.

Lime Grilled Chicken Caesar Salad

What a simple MEAL this was to make. I didn't have the right marinade but I did use one from another chicken recipe which calls for italian dressing, lime juice and honey. I cooked the chicken on the george forman grill. I used bags of mixed salad. I added the warm chicken to the salad and also added some thawed out frozen peas. Will def make this again.

Restaurant-Style Chicken Tenderloins

This was just okay for me. Seemed like so much italian dressing so I added more honey. I cooked them on the G.F. grill along with some rice and carrots and peas. Not sure if I will make it again.

Quick and Easy Chicken Noodle Soup

mmmm mmmm good. This soup was fresh tasting. The only thing I did differently was cook the noodles separately to keep the broth from getting starchy. When the noodles were almost done I added them to the pot of soup. Very refreshing taste.

Oven Fries II

The potatoes were pretty good. I added garlic powder and black pepper to them . They sorta looked dried up coming from the oven. Are we supposed to peel them? I didn't. They were surprising soft while the skins gave a little crunch. I cooked these with bbq meatballs and frozen corn. Will definitely make them again.

After reading some of the reviews I replaced some of the broth with water hoping to reduce the salt content. I had something taking up the oven so I too made it stove top. to quote randy jackson.. "it was just alright to me" I won't be making this again, sorry.

Soy Garlic Steak

I used some round steak instead of flank. Cut it into very thin strips across the grain. I let it marinate for about 3 hours and then cooked it on a g.f. grill. Wrapped it in a flour tortilla with mozz cheese. I thought it was pretty good. My daughter thought it was a little sweet. Will def use this again.

Brown Sugar Meatloaf

My son in law told me to keep this recipe as he loved it. It was just okay for me. Maybe I shouldn't have used a glass baking dish. Seems like I lost all the brown sugar ketchup mixture from the bottom of the loaf. I thought I was going to end up with a nice sweet crust underneath. I also put half the b.sugar and Ketchup on top. It was very moist. I think I will add a little less bread crumbs next time because the texture was 'bready'. Also I had to leave the ginger out since I didn't have any. All in all a decent meatloaf. Thanks

Black Pepper Beef and Cabbage Stir Fry

This recipe is cheap and it makes alot when combined with rice, I don't know where all the sauce is that other reviewers are talking about. Before adding the water and corn starch I stood over the stove wondering what I was supposed to be thickening up. I added onion, salt and some more soy sauce. Not sure If i will make it again.

Sloppy Joes II

Wow, so simple and easy to make. My daughter thought it wasn't saucy enough. My son and I thought it was just right. Matter of fact he tried to 'steal' his sister's serving by saying hers fell on the floor. They are in their 20's and still trying to pull that. :) I wouldn't change a thing, maybe only to make more of it to have fuller sandwiches.

Tender Chicken Nuggets

This is a very simple dish to make. I made it exactly the way stated but I didn't care for the texture of the nuggets coming out of the oven. There wasn't any crunch to them. I served them from the oven to my young granddaughter but for myself and rest of family I heated up a tiny bit of oil in frying pan and just crisped them up a bit. Dipped them in bbq, ranch and honey mustard dressing. Will make these again. ty

Spaghetti Carbonara II

I am 47 years old and this is my first time making stuffed peppers. I used a jar of marinara sauce instead. I too covered the pan instead of basting.I cooked some onions with the beef and added fresh garlic instead of powder. Topped it off with some mozzarella last 10 ten minutes. It tasted pretty good but needs just a bit more seasoning. Good comfort food on a cold winter day.

Pineapple Chicken Tenders

My granddaughter loved this dish. Everybody did.I cooked mine in a frying pan. I put some marinade aside before plunging the chicken in to add to the pan for extra liquid. I never heated up a marinade before. I had a can of pineapple slices but it didn't have enough juice.I had a can of mandarin oranges on hand so I added some of that. I did include the pineapple to the pan at the end. Wish I had more chicken :)

Pleasant Pork Chops
