Mama Bear's Porridge

Reviewed: Sep. 16, 2007
This is great. I can't wait to make it again. It is so filling, I made a big bowl but couldn't finish it. I only did one thing different and that was to add about 2 or 3 tsp. of brown sugar to make it sweeter. I also cooked it a few minutes more on low to make sure the eggs were done. I'm sure the hot porridge would have cooked them thoroughly, but I'm just paranoid.

Garbanzo Tomato Pasta Soup

Reviewed: Sep. 15, 2007
Very good. Does have a more mild flavor, but I let mine simmer for about half and hour to let the flavor come out. I also made mine with a full cup of pasta b/c I like a chunkier soup, and used Italian seasonings. Will definitely make again.

Chocolate Waffles I

Reviewed: Aug. 2, 2007
These were a huge hit at my house. I dumped half a bag of milk chocolate chips into the batter and I think that helped a lot too. I had planned on making the hard sauce, but changed my mind at the last minute and just served with syrup. Really good, tho.

Emily's Excellent Taco Casserole

Reviewed: Aug. 2, 2007
I love these! I followed the recipe exactly and they came out great. I'm going to start doing mini batches for just myself, since they can't be saved for later.

Soft, Moist and Gooey Cinnamon Buns

Reviewed: Jun. 18, 2007
Don't change anything. Its perfect. These are just the best. They are easy to make; its just a lot of work, but well worth it. My husband is always pestering me for these, and when I oblige, he is sure to eat over half the pan alone.

Eggplant Parmesan I

Reviewed: Jun. 18, 2007
I really like this recipe, although I do not follow the measurements at all. As I am just cooking for my husband and myself, I just use one eggplant, and I do salt the eggplant before baking it. Then let it soak for about 10 minutes, as suggested by other users. When its ready to bake in the sauce, I pour a about one can of sauce in the bottom of my 9x13, and dump a load of cheese on it. I really only bake until the cheese is melted. The first time I made it I let it go the full half hour and burnt the cheese. I serve with angel hair pasta topped with the Easy Alfredo Sauce recipe. Really rich, really good.

Chocolate Chip Banana Muffins

Love these. Absolutely love them. I haven't changed anything in the recipe, although one time I did substitute sour cream for the yogurt. Still came out great tho.

Best Peanut Butter Cookies Ever

Reviewed: May 29, 2007
We love these. I have made them three times in the past two weeks. I didn't change anything, and they came out great. In my second batch, I wrapped the dough around Hershey kisses. They're rich, but so good. I also tried the recipe with natural peanut butter, but we didn't like them as much that way.

Caramel Filled Chocolate Cookies

Reviewed: May 21, 2007
First off, these were very tasty. However, I followed the recipe verbatim and found the dough to be way too sticky to work with. It was almost a batter, even after I chilled it. I made about 4 cookies total before I got completely fed up. I ended up putting it into an 8x8, and pushing rolos and Hershey's kisses down into the batter. It came out great. Very rich, and more cake-like than cookie. I will probably make it again, but I think I'll stick to making it into a cake vs. fighting with the dough.

Easy Alfredo Sauce I

Reviewed: Mar. 7, 2007
This is absolutely fabulous. I have made it so many times; it is so easy. I often will substitute the heavy whipping cream for half and half, or do 1/2 whipping cream and 1/2 half and half to make it stretch. Don't use milk. I made that mistake once and won't be doing it again. Add a little garlic powder, and you've got restaurant alfredo sauce on your stovetop.

Slow Cooker Chicken and Dumplings

Don't change a thing. My husband begs for this at least once a week. The first time I made it he ate 4 bowls. He absolutely loves it.

Cheesy Tortillas

Reviewed: Mar. 7, 2007
Ok, I never give 5 stars to anything I have to tweak. But, with a little work, these are really very good. I took the basic set-up, and altered it. The original recipe was way too bland for our tastes. I layered the first tortilla with a Mexican blend cheese, and a Monterey-Jack jalepeno cheese, then salsa, then more cheese. The cheese on both sides helps the tortillas stay together when you flip them. Cook over a very low heat so the cheese gets melted and the tortilla doesn't burn, then serve with sour cream.

Potato and Cheddar Soup

Reviewed: Nov. 16, 2006
It only gets 4 stars because it needs more cheese, at least 2 cups. I just throw tons of Velveeta in there and leave out the ham. My husband loves this soup, and its very easy to make. Be sure to saute the onions first in the butter, and don't let it go too long or the potatoes will start to break up, but its delicious.
